Thank goodness for an easy recipe like Instant Pot Mushroom Barley Soup and an amazing husband,  a Weight Watchers friendly dinner was ready in 30 minutes. Oh and delicious too!!

I tease my husband about his “collection” of small kitchen appliances. If there’s a new gadget to cook or create something in the kitchen he has to have it. We even had to buy a Sterilite Plastic Storage Cabinet to store all of his treasures in. If we kept them in the kitchen, there would never be room to cook.

His collection does come in handy, so I don’t want to complain. Especially when all of those appliances have him willing to try new recipes, like this Instant Pot Mushroom Barley Soup. The Instant Pot was originally bought for me, but since he likes to cook, I decided he could have it!

Last week at Aldi they had a great deal on mushrooms. When I see a great deal on produce, I tend to stock up. Buying two pounds of mushrooms without a plan for them isn’t always a good idea. After a day or two in the refrigerator I knew we better cook them up fast or else they’d go to waste. I found a recipe for Instant Pot Barley and Mushroom Soup and with a few simple modifications it was ready in 30 minutes. That Instant Pot is definitely the best!

 I had to grab these recipe books so he the hubby can find his own ways to play with the Instant Pot. Those silicone mitts are for me! The pressure release on the Instant Pot still scares me. It’s never been a problem, but I remember all of those stove top pressure cooker stories from my childhood and I can’t move past it. So the silicone mitts make me feel better at least.

Make this delicious soup that is a whole meal in a bowl! Instant Pot Mushroom Barley Soup is ready in 30 minutes.

Ingredients 

  • 8 cups beef broth
  • 3/4 cup barley
  • one medium onion chopped
  • 2 carrots chopped
  • 4 cloves garlic minced
  • 1 lb sliced mushrooms
  • 1 tsp salt
  • 1/2 tsp freshly ground pepper
  • 1 Tbsp Steak Sauce

Make this delicious soup that is a whole meal in a bowl! Instant Pot Mushroom Barley Soup is ready in 30 minutes.

 

Directions 

  • Add all ingredients to the Instant Pot and stir well.
  • Set Instant Pot to Manual / High Pressure for 20 minutes.
  • Let pressure release naturally for 10 minutes then Quick Release
  • Stir well
  • Enjoy!

Ingredients
  • 8 cups beef broth
  • ¾ cup barley
  • one medium onion chopped
  • 2 carrots chopped
  • 4 cloves garlic minced
  • 1 lb sliced mushrooms
  • 1 tsp salt
  • ½ tsp freshly ground pepper
  • 1 Tbsp Steak Sauce
Instructions
  1. Add all ingredients to the Instant Pot and stir well.
  2. Set Instant Pot to Manual / High Pressure for 20 minutes.
  3. Let pressure release naturally for 10 minutes then Quick Release
  4. Stir well
  5. Enjoy!
