Don’t you just love fall? All the beautiful colors, scents and tastes make it my favorite time of year. With all the pumpkin recipes getting shared and pinned all over the place, I figured I better join the party! I whipped up this light Pumpkin Cheesecake Mousse, to enjoy a dessert that won’t break the calorie budget.

Easy and light pumpkin pie mousse will delight your guests. Bring it to Thanksgiving dinner!

Whether you want light, whipped, Greek or Gogurt, Yoplait offers a choice and flavor that everyone can enjoy.  We not only eat yogurt for breakfast and snacks, we use it in a lot of different recipes. Pumpkin Cheesecake Mousse is one of those recipes.  If you can make food that tastes good, uses only a few ingredients and is ready in less than 15 minutes, sign me up! Pumpkin Cheesecake Mousse fits the bill and would be a perfect dessert for a potluck or holiday dinner.

If you don’t have the ingredients at home, your local Walmart will have everything you need to make this easy and delicious treat.

 

Pumpkin Cheesecake Mousse Recipe

Ingredients

  • 2 Yoplait Greek Whips 100 Vanilla Cupcake flavor 4 oz containers
  • 1 Cup canned pumpkin
  • 1/2 cup Whipped Cream Cheese
  • 4 oz  Whipped Topping
  • 2 Tablespoons Pumpkin Pie Spice
  • 20 Vanilla Wafers (reserve 4 for garnish)

Directions

Put 16 Vanilla Wafers in a plastic bag and crush into crumbs. (Kids love doing this job.)

In a large mixing bowl add both cups of yogurt, add pumpkin and beat until light and fluffy.

Fold in the whipped topping.

Spoon a tablespoon of vanilla wafer cups in to 4 dessert cups.

Divide the pumpkin cheesecake mixture evenly in to the cups.

Sprinkle with additional pumpkin pie spice and top with one vanilla wafer

Serve immediately or refrigerate for later.

Not only is it the perfect ingredient for our Pumpkin Cheesecake Mousse, it’s delicious plain or with added fruit. Stir in a few frozen blueberries and you have a light snack, that tastes amazing!
