Air Fryer Zucchini Fries

Fries are a favorite side and snack, and it’s easier than ever to make your own at home. By using an air fryer, you can experiment with different ingredients, and we did just that and have loved these air fryer zucchini fries!

This fry recipe is not only delicious, but between the air fryer and using zucchini, it’s actually a more nutritious version of fries that you can grab at restaurants.

Ingredients for this recipe

Parmesan Cheese: Adds flavor and texture. 
Egg: Helps seasonings stick. 
Zucchini: The “fries” for this recipe.
Salt: For seasoning and to prevent sogginess.

How to make air fryer zucchini fries

Step 1: Slice off the edges of the zucchini. Then, slice the zucchini in half. Cut each half into 8 fries. You should get 16 fries from each zucchini.

Step 3: Pat the zucchinis with a dry towel or paper towel to remove excess water and some of the salt. You can even rinse the zucchinis and pat dry if salt is a concern.

Step 5: Let the egg drip off and add it to the parmesan plate. Using your other hand, pat the cheese into the zucchini.

Step 2: Set the zucchini in a colander over a paper towel to catch water from the zucchini. Then, add a ½ tablespoon of salt. Mix the zucchinis with your hands or a large spoon to help coat the zucchinis with salt. Wait 20 minutes to let the moisture of the zucchinis get pulled out. This helps make the zucchinis more crispy.

Step 4: In a small bowl, add 1 egg per zucchini. On a plate, add 1/2 cup of grated parmesan cheese. With one hand, grab the zucchini and dip it into the egg.

Step 5: Lift it with the designated cheese hand and add it to the air fryer basket. Keep the zucchinis spread apart so that they are not touching. Set the air fryer to 375 degrees F for 15 minutes. Flip the zucchini fries over at the 10-minute mark. Serve immediately.

Storage suggestions

These fries would be best served after making, but if you choose to make them ahead, you can definitely still enjoy them later. Be sure to store them in an airtight container in the refrigerator for up to 3 days.

Reheating Tips

If you’ve made these zucchini fries ahead of time and want to heat them up, I would recommend doing so in the oven to retain some of the original texture.
