Cajun Shrimp and Pasta

Skillet Cajun Sausage with Shrimp


1 package spicy sausage, sliced
12 oz shrimp
3 TBSP olive oil
4 mini orange bell pepper, sliced
1 yellow bell pepper, sliced
4 mini red bell peppers, sliced
1 yellow onion, peeled and sliced
2 tsp minced garlic
1 can fire roasted tomatoes
1 box Penne  pasta
1 bunch parsley
pinch salt & pepper


Add olive oil to a cast iron skillet. Bring heat to medium add in slices of both of the sausages.
Add shrimp to the skillet and cook thoroughly.
Allow the sausage to cook until brown on both sides.
Remove sausage and shrimp from the heat. Set aside.
Add the peppers and onion to the skillet allowing them to cook in the olive oil and juices from the sausage.
Following the direction on the back of the box cook the penne.
Once cooked drain the pasta.
Return the skillet to medium heat.
Add the sausage and veggies back in the skillet. 

 Stir to combine the sausage, shrimp, and veggies.

Pour the cooked pasta into the skillet with the sausage, shrimp and veggies.

Stir to blend all of the ingredients.
In a bowl add the fire roasted tomatoes and minced garlic.  Salt and pepper to taste. Stir to blend the two together.
Pour over the ingredients in the skillet. Stir the the ingredients in the skillet to incorporate all of the flavors.
Continue to heat the sausage, shrimp, veggies, and pasta on medium.
Sprinkle the parsley on top of the skillet meal.

Serve and enjoy!
