My husband is an advocate for charcoal grilling. Not only does the food taste better, charcoal, lump charcoal to be exact is eco-friendly. We don’t use any lighter fluids or chemically treated charcoal in our grill.

When you heat up the grill, fill it up! I was making three pounds of chicken for a large family meal, but I cooked seven more pounds all at the same time to freeze for future meals. That not only saved me time, but will also cut back on energy costs.

When you grill you can make your whole meal in one place. Cook the meat, veggies and desserts at one time. That means less clean-up, again saving you time and cutting down on energy costs.

While the grill is still hot, we also make s’mores. We’re spending family time outside, enjoying ourselves, so the A/C and the fans are turned off inside.

When your done grilling, clean the grill immediately while it’s still warm.

Close the lids and vents and you just may be able to use the some or all of the charcoal next time your grill.

Charcoal Grilled BBQ Chicken Breast Recipe

The recipe makes enough sauce for 3 lbs of chicken breast. You can adjust the recipe accordingly if you want to make more or less chicken.

When we use the grill, I fill it up, so the heat doesn’t go to waste.

Start with three lbs of boneless skinless chicken breast, pounded flat. I don’t pound my to hard. Their still rather thick. It’s all about your preference.

Add the pounded chicken breasts to a 3 quart bowl or one gallon freezer bag and fill with water.

Add 1/4 cup of brown sugar and 2 Tablespoons of Kosher salt. Refrigerate for at least two hours to allow the meat to brine. I sometimes let mine sit overnight.

In the meantime, make your BBQ sauce so all of the flavors have time to combine.

Grilled BBQ Chicken Breast Recipe Sauce

2 cups BBQ Sauce

1/4 cup brown sugar

3 cloves minced garlic

Juice of 3 limes

1/4 teaspoon black pepper

1/2 teaspoon kosher salt

Mix well and refrigerate for at least two hours to allow flavors to blend.

When your are ready to start cooking, fire up your charcoal grill. We use a chimney starter.

Discard brine liquid and place chicken breasts on hot grill.

Cover generously with BBQ sauce.

Allow to cook about 6 minutes, turn over and cover with more BBQ sauce.

Start checking the temperatures of your chicken breast at the thickest part after six to nine minutes of cooking. An Instant Read Thermometer (sales link) is perfect for accuracy and efficiency. Ours didn’t heat up fast, because the brine froze on the top shelf of the refrigerator. Lesson learned!

Cooking times will vary depending on the thickness of your breasts and the efficiency of your grill. Remember you only need to cook the chicken to 165 degrees for juicy perfection!
