Ingredients for this recipe

Lime: Juiced and zested.
Orange: Freshly juiced.
Chili powder: For spice.
Cumin: For flavor.
Cayenne pepper: Optional for those who want extra spice.
Olive oil: Helps to hold all of the marinade.
Brown sugar: For rounded sweetness.
Roasted red pepper: Or pimento.
Garlic cloves: Adds well-rounded flavor.
Parsley or cilantro: For some earthy notes.
Salt and pepper: To taste.
Chicken breast: Cut into bite-sized pieces.
Bell pepper: 3 colors, cut into one-inch chunks.
Onion: Cut into one-inch chunks.

Substitutions

If you don’t want to use roasted red pepper in this recipe, you can also use pimento. Cayenne pepper is optional, depending on how much spice you want in your marinade.  

Equipment needed for this recipe

To make kabobs, you will of course need some skewers. You’ll also want a mixing bowl to mix together the marinade ingredients. Have a cutting board on hand, as well as a knife to cut the meat and vegetables. Use a grater to zest the lime. Use a baking sheet to bake the kabobs, and line it with parchment paper to minimize mess and prevent sticking.

How to cook kabobs in the oven

Step 1: Soak wooden skewers for 6 or more hours before use so they don’t burn in the oven. 

Step 2: Roll the orange back and forth on a hard surface for at least 20 seconds. Cut the orange into quarters and squeeze out as much juice as possible. (you can also substitute 3 oz of prepared OJ)

Step 3: Roll the lime back and forth on a hard surface for at least 20 seconds. Grate the peel of your lime to obtain 1 to 2 teaspoons of zest Cut in half and squeeze out as much juice as possible. (you can substitute with 2 TBSP of prepared lime juice)

Step 4: Mix marinade ingredients – lime zest and juice, orange juice, oil, garlic, sugar, chili, cumin, minced canned chipotle peppers, parsley or cilantro, salt, and pepper in a large ziplock bag or bowl with a tight seal.

Step 6: Prepare your peppers and onions and cut them into large chunks.

Step 5: Then cut the chicken breast into cubes or small pieces. Place the chicken pieces into the marinade and mix well. Leave the meat to marinate for 1-6 hours. Overnight is good, too.

Step 7: Thread the prepared chicken pieces onto wooden skewers, alternating with onions and bell peppers of different colors. 

Step 8: Place prepared skewers onto a parchment paper lined cookie sheet Bake at 400 degrees for about 25 minutes until vegetables are tender and chicken reaches an internal temperature of 165 degrees.
