Curry Chicken and Apple Salad

Ingredients

1 can (12.5 oz) Canned Chicken drained or 1 Cup cooked chicken breast
½ cup Mayonnaise
¼ cup Yogurt, plain
½ Apple, large, peeled and diced
½ Red pepper, diced small
1 Green onion, minced
1 Tbsp. Pickle juice
1 tsp. Curry powder
Salt and pepper

Directions

Combine in a bowl, the chicken, apple, red pepper, and green onion.

In a separate bowl, mix the mayonnaise, yogurt, pickle juice, curry powder, salt and pepper to make a dressing. Combine well.

Add the dressing to the chicken and apple and mix well.

Refrigerate for at least an hour to let the flavors mingle.

While waiting, de-seed cucumber portions.

Scoop the chicken salad into the cucumber boats and serve.
