Instant Pot Brussels Sprouts with Bacon and Garlic

We love Brussels Sprouts with this extra hint of flavor. A few fresh garlic cloves and center cut bacon can bring amazing flavor to an otherwise boring vegetable.  With the updated Weight Watchers plan, this remains at only 1 Freestyle SmartPoint per serving.

This delicious recipe makes 4 Servings and calculates to 5 WW points per serving.

Ingredients for Instant Pot Brussels Sprouts:

For this recipe we will be using fresh Brussels sprouts, garlic, shallots, center cut bacon, and water. That’s it! You can find the full amounts and ingredients in the printable recipe card at the bottom of the post. There’s nothing complex or complicated in this one.

The flavors work great together and they’re simple so there’s not a lot of adjusting you need to do on account of hard to find ingredients, etc.

Directions for Instant Pot Brussels Sprouts

Prepare Brussels sprouts by removing stems and halving larger pieces so they become bite-sized.

Mince garlic cloves, slice shallots and cut bacon into small pieces.

Turn Instant Pot to Saute, and add bacon to Instant Pot liner.  Cook for 5-7 minutes or until it begins to render and crisp.

Add in remaining ingredients and stir well.

Place lid on Instant Pot and set to seal.

Cook on manual high pressure for 4 minutes.

Quick release and serve.

You may wish to add salt or pepper to the final product, but I found that with the rendered bacon, it did not need any additional seasoning.

If you prefer, you can cook the bacon a bit crisper, but as it comes to pressure it will soften.  I have also made this with the bacon removed after rendering and simply added as a garnish.  This is up to you and your preferences on texture.

  1. I made this a while ago and it was so good! Now I want to make it for a side for company. How long would I have to cook it if I doubled the portions?

    1. Thank you! To double the portions I would use the same cooking time. You can always check the tenderness and cook a few more minutes if not to your liking. Enjoy!
