Making this salad was so much fun! It’s a complete meal and can be on the table in less than 5 minutes. It’s full of lots of bright colors, grains, protein, vegetables and fruit all on one pretty salad plate. Plus, that secret ingredient gives it just the right amount of sweet to add to the crunch. Speaking of secret ingredient, I bet you want to know what it is. It’s cereal, yes cereal!  Quaker® Real Medleys® Cherry Almond Pecan Multigrain Cereal to be exact.


While I was wondering through the aisles at Walmart creating this recipe in my head, I spied the Quaker® Real Medleys® and knew I had found the perfect secret salad ingredient. Fruit, nuts and whole grains are an excellent compliment to vegetables, adding amazing flavors and colors to please any palette. Crunchy Kale Salad would make a hearty lunch or compliment your dinner any night of the week. Cereal just isn’t for breakfast, anymore!


No matter what age, young or old, there’s just something special about cereal. Cereal has always been a staple in our household. When our kids were still at home, we’d eat Quaker® Life Cereal for breakfast and use the cereal boxes to practice phonics, learn about nutrition and even talk about math and science. I still take Quaker® cereals in the car, as a filling easy snack on the go or add it to lunch boxes instead of chips or cookies. Quaker® Simply Granola is a wonderful topping for yogurt or even ice cream. Recipes, snacks or breakfast the options for eating cereal are endless.

This Crunchy Kale Salad recipe doesn’t just taste amazing, it’s so easy. It’s on the table in just a few minutes. When I made my Crunchy Kale Salad recipe, my ingredients included, Kale, shredded carrots,  purple cabbage, real bacon bits and Quaker® Real Medleys® Cherry Almond Pecan Multigrain Cereal. You could easily substitute any of the vegetables to fit your tastes. I really wanted a salad full of crunch and color and I achieved that with my ingredient list.

You will need to chop or tear the Kale in to bite size pieces. Walmart had 2 lb bags of Kale already washed and chopped, score! I also picked up the carrots already shredded and I chopped the purple cabbage in coarse chunks. Place the kale, carrots and purple cabbage in a large bowl and toss. Gently toss in real bacon bits and Quaker® Real Medleys® Cherry Almond Pecan Multigrain Cereal.

Plate your salad and top with more Quaker® Real Medleys® Cherry Almond Pecan Multigrain Cereal. You can add a light vinaigrette dressing, but the cherries and multigrain flakes in the Quaker® Real Medleys® added so much flavor, there was no need for any dressing.

Secret Ingredient Crunchy Kale Salad Recipe

This salad is an all in one meal. The flavors are amazing!


  • 1 large head or 1 lb of chopped Kale
  • 2 cups shredded carrots
  • 1 cup coarsely chopped purple cabbage
  • 1/4 cup real bacon bits
  • 1 1/2 cups Quaker® Real Medleys® Cereal


  1. Combine kale, carrots and cabbage in large bowl.
  2. Toss well.
  3. Gently toss in real bacon bits and 1 cup of Quaker® Real Medleys® cereal.
  4. Plate your salads and top with additional Quaker® Real Medleys® if desired.
  5. Serve and enjoy!

    I’m so happy to find this recipe because I have a HUGE bag of kale from Costco. I was trying to think of ways to use it up and this recipe is definitely a winner to try!!

    This looks delicious! I use whole grain cereals, ground for breading on things like onions for onion rings. The texture is great!

    I also love Kale and can eat it in just about every form. This sounds like such a yummy salad with the added crunch of the cereal.
