Each serving (1 donut) is 3 Weight Watchers Freestyle Smart Points. That’s pretty exciting when you think about how indulgent mac and cheese can be; this isn’t an everyday food in our house so mac and cheese in donut form is like a double treat!  I really love that I can indulge in a treat like these macaroni and cheese donuts without having to splurge all my weekly points or even worry about going over on my dailies for that matter. At just 3 WW points each I can have one or two with some veggies at lunch or as a fun addition to our dinner meal plans.

Can I meal prep this delicious mac and cheese? 

Sure! These will hold up to reheating the next day and they’ll keep in the fridge for a few days. I prefer them fresh so I don’t make them in huge batches unless I know I’ll have some help eating them…The great thing about this tasty recipe is that it is just that…tasty. Everyone devours these donuts when we gather for family dinner so there’s not usually much in the way of leftovers.  If you are meal prepping these I’d consider two a serving for 6 Freestyle Smart Points and then I’d pair it with free vegetables on the side. Either fresh or steamed veggies like broccoli or carrots are super easy to throw into a container and eat on the go!

What is that sprinkled on top of the donuts? 

The topping is the grated parmigiano-reggiano cheese. You can sprinkle it on top after they’re done or include it in the pan before you bake. Either way! 

What ingredients do I need to make these macaroni and cheese donuts? 

  • 2 1/2 Cups Elbow Macaroni, Uncooked
  • 1 Tbsp Butter
  • 2 Tbsp All Purpose Flour
  • 3/4 Cup Skim Milk
  • 1 Cup Pumpkin, Canned
  • 1 Cup Reduced Fat Cheddar Cheese, Shredded
  • 1 Tsp Kosher Salt
  • 1/2 Tsp Paprika
  • 1/2 Tsp Garlic Powder
  • 6 Sprays Olive Oil Cooking Spray
  • 2 Tbsp Grated Parmigiano-Reggiano Cheese

What’s the easiest way to make these mac and cheese donuts? 

Weight Watchers mac and cheese donuts are a delicious snack! These mac and cheese donuts also make a tasty appetizer and a nice on the go lunch option.

Preheat oven to 425 F.  Prepare pasta according to the box, you want it al dente so cook for approximately 2 minutes less than instructed. Drain and set aside. Do not rinse.  Using the same pot, melt the butter and then stir in flour. Cook for about 1 minute until lightly golden brown.  Slowly whisk in the milk. Then add in pumpkin puree, cheddar cheese, salt, paprika, and garlic powder. Stir and cook until cheese is melted and all ingredients are combined. Should take about 4 minutes.  Remove from heat and add in macaroni, stir until combined.  Prepare two six hole donut pans by spraying with olive oil cooking spray and lightly sprinkling with the grated Parmigiano-Reggiano cheese.  Next fill the donut pans by evenly dividing the macaroni and cheese mixture.  Bake until golden brown on top and bubbling, or for about 15 minutes.  Let rest for 10 minutes and then flip the pans over to remove the donuts.

If you don’t have donut pans I wouldn’t rush out and buy some…You can bake these mac and cheese donuts in muffin pans or as a whole in a large baking dish. The result will be roughly the same…though I’m partial the donut shape and the crunchy bits on the edges!
