One of the easiest ways to enjoy fruits and vegetables all year long is to buy frozen.  Freezing is simply nature’s pause button. If you have fruits and vegetables in the freezer all year long, you’ll always have something good to eat!

I made this Vegetable Chicken Salad Recipe for brunch this week. I just filled the freezer with chicken breast and used the Best Yet Coupons to fill up on fruits and vegetables, too.

Vegetable Chicken Salad Recipe

This recipe makes four generous 3/4 cup servings. Each serving is only one Weight Watchers Point. Eat up!

Vegetable Chicken Salad Ingredients

  • 24 oz Best Yet Frozen Steam Fresh California Vegetable Blend (You will need two bags. Each bag is 12 oz)
  • 1/4 Cup Light Mayo
  • 1/4  Cup Plain Fat Free yogurt
  • 1 Tbsp Lemon juice
  • 2 cups cooked and chopped Chicken Breast
  • 2 Tbsp finely chopped red onion
 

Vegetable Chicken Salad Directions

Prepare Best Yet 24 oz Best Yet Frozen Steam Fresh California Vegetable Blend  as directed. I like the microwave steam bags. In six minutes they are ready. You let them sit for a minute or two and they are ready to use.

Whip together mayo, yogurt and lemon juice to make a thick sauce.

Stir sauce into cooked chicken

Add chopped onion and stir well.

Gently fold in one bag of  Best Yet California Blend vegetables.

Mix until everything is well coated.

Serve 1/2 cup of prepared Vegetable Chicken Salad  over  1/4 cup of cooked Best Yet Frozen California Blend vegetables.
