Ground Turkey Stuffed Potato Skins Recipe

1. Place the potatoes on the prepared baking sheet, at least an inch apart, and use a fork to prick holes into the potato skins.

2. Drizzle a half-teaspoon or so of olive oil over each potato, then use clean hands or a basting brush to rub the oil into the skin, coating the potatoes evenly on all sides.

3. Sprinkle sea salt over the potatoes, then place them in the oven. Bake for 45 minutes to 1 hour, or until fork-tender. Set aside and allow the potatoes to cool.

4. Meanwhile, prepare the filling. In a skillet over medium heat, drizzle a couple of teaspoons of oil and add the chopped onions. Saute for 3–5 minutes.
