Let’s spice things up with this delicious and healthy taco soup. It’s a little spicy and packed with a whole bunch of great ingredients that come together to make the perfect lunch or dinner recipe.

Is this a healthy taco soup recipe?

It sure is! The great thing about this taco soup recipe is that it is packed with vegetables, beans for fiber, and of course some lean protein.

Can I make this easy taco soup family-friendly?

Not everyone likes spicy and I get that. You can make this recipe as spicy (or mild) as you’d like. You can use regular tomato juice and leave out the peppers if you’d like to dial it back a notch.

- olive oil - garlic - onion - ground turkey - red salsa - green chilies - tomatoes - spicy tomato juice - chicken broth - kidney beans - black beans

Set your Instant Pot to the sauté function. Add the olive oil and allow to heat up. Add onions and garlic and cook 2-3 minutes or until garlic is fragrant and onions are translucent. Stir occasionally.

Add ground turkey and cook until no longer pink. Turn Instant Pot off. Add chicken stock to Instant Pot. In a small bowl, add black and kidney beans and corn.
