– Sweet potatoes – Carrots – Unsalted butter – Ginger – Low fat milk

INSTRUCTIONS: 1. To roast the potatoes you'll need to stab them a few times each and place on a baking sheet whole. Bake for 1 hour or until tender.

2. While the potatoes are baking you can boil the carrots in salted water for about 25 minutes until they're very tender. Drain and set aside when done.

3. Melt butter in a small skillet, cook for 5-6 minutes, stirring or swirling the pan occasionally.
