Sweet Potato Salad

This sweet potato salad recipe is great for vegetarians, Weight Watchers, and more! It’s a delicious salad recipe everyone will love.

You can serve sweet potato salad for lunches, as a side dish, or for dinner. It’s an easy recipe to meal prep as well.

INGREDIENTS

- Sweet potatoes - Mixed lettuces - Red onion - Red apple - Pomegranate or dried cranberries - Half lime - Extra-virgin olive oil

INSTRUCTIONS: Preheat a pan over medium heat, meanwhile toss sweet potatoes in oil then season for 2 minutes with salt, pepper, garlic powder & squeeze a half lime.

Distribute them evenly in a single layer over the pan and cook until tender, about 10 minutes stirring constantly.

Let cool for 10 minutes, then transfer to a large bowl previously with the mixed lettuces.
