Air Fried Coconut Shrimp

INGREDIENTS

– Cooking Spray – 1 Mango, Pitted, Peeled, Cubed – 2 Tablespoons Fresh Lime Juice – 1 Teaspoon Fresh Ginger, Grated – 1 Teaspoon Kosher Salt – 1 1/2 Tablespoons Fresh Mint,      Chopped – 1 Medium Jalapeno Pepper,      Seeded, Minced – 18 Large Shrimp, Raw, Peeled,      Deveined, Tail On – 3 Tablespoons Cornstarch – 2 Eggs – 1/3 Cup Unsweetened Coconut      Flakes – 1/3 Cup Panko Breadcrumbs

INSTRUCTIONS

We’re going to make the dipping sauce first. We’ll cut up half the mango, combine the lime juice, ginger, and 1/4 teaspoon of salt in a blender and process until the mixture is smooth.

Pour that mixture into a small bowl and set it aside while you cut up the remaining half of the mango. Add the puree we just made, the mint, diced jalapeño pepper, and some water together in a bowl and mix.

You can also toss everything into the blender and process the mixture completely smooth. Whatever you prefer will work fine.

Use just enough water to make it saucy, not too much, use the water to create your desired thickness for the dipping sauce.

Now let’s start on the shrimp. Spread the cornstarch out on some wax paper. Mix the eggs in a large bowl until frothy.
