Weight Watchers Pumpkin Soup Recipe

This Weight Watchers pumpkin soup recipe is so easy to make! My WW pumpkin soup recipe is rich in vitamins and minerals while still being low in points.

– 1/2 medium onion, chopped – 2 cloves of garlic, minced – 1 small jalapeno, chopped - I left the seeds in – 1/2 tsp salt – 1/2 tsp pepper – 1/4 tsp oregano – 1 tsp your favorite all-purpose seasoning – 1 tsp red pepper flakes (feel free to reduce or leave out if you would like to reduce the spice)



1. Spray a low pot of dutch oven with cooking spray. 2. Add in onions, jalapeno and garlic, saute until fragrant and onions are translucent.


3. Add in pumpkin, beans, broth and seasonings. 4. Allow to simmer for 10-15 minutes. 5. Using an immersion blender or food processor (if using a food processor, blend the soup


6. (in batches) blend all the ingredients until smooth. 7. Top with a dollop of nonfat greek yogurt and a few jalapeno slices if desired. 8. Enjoy!
