INGREDIENTS

– Sweet Potatoes – Olive Oil – Shallots – Chicken – Apple

INSTRUCTIONS:

1. First, we need to preheat the oven to 350 degrees F. Next, we’ll poke a few holes in the potatoes with a fork. Cook them on a microwave-safe plate for about 7 minutes.

2. Let them cool just slightly, then cut each one in half, scoop out the middles, and add to a large mixing bowl. Mash them with a fork.

3. Save the potato skins to be refilled. I like to leave just a little bit of potato to help the shells keep their shape.

4. Now, in a skillet over medium heat, add the shallots and oil. Cook until the shallot is softened, then add in the apples and sausage. Cook for about 5 minutes.

5. Now we can add the sausage mixture with some salt and sage to the bowl with the potato middles! Stir to combine everything together.
