This super easy Weight Watchers tomato salad recipe is quick, easy, and low in points. It’s a great salad topper or you can eat it alone with chips, crackers, or crunchy veggies!
– 6 Roma Tomatoes, cut into pieces – 2 tablespoons fresh basil, finely chopped – 1 small shallot, finely diced – 1 clove of garlic, minced – 1 tbsp olive oil – salt and pepper – 2 tbsp low fat Italian Dressing – Italian Seasoning – 1/4 cup red wine vinegar
In a medium bowl add the tomatoes, basil, shallots, and garlic.
Sprinkle with salt, pepper, and Italian seasoning.
Stir the ingredients and drizzle with olive oil, Italian dressing, and red wine vinegar.
Stir until all ingredients are covered in liquids.
Refrigerate for at least a few hours until ready to serve.
