While most chowder would include cream, I still find this to be a delicious option without the cream.  This Weight Watchers friendly chicken corn chowder uses a cream soup as a thickener that also adds great flavor alongside the vegetables.

Ingredients for Chicken Corn Chowder:

Boneless skinless chicken breasts, cut into 1″ chunks
Brozen whole kernel corn
Carrots, diced
Celery, diced
Vegetable broth
98% fat-free cream of chicken soup
Vegetable bouillon
Garlic powder
Onion powder
Dried parsley flakes
Salt
Black pepper

Directions for Chicken Corn Chowder:

Place chicken pieces in the bottom of the Instant Pot Liner
Add in seasonings, vegetables, cream soup, bouillon, and broth.
Stir to combine, and set the lid to seal.
Cook on the poultry setting for 18 minutes.
Once the cooking cycle has completed, allow to naturally pressure release for 5 minutes.
Release remaining pressure and serve.

Ingredients

  • 1 pound boneless skinless chicken breasts, cut into 1" chunks
  • 1 cup frozen whole kernel corn
  • 1/2 cup carrots, diced
  • 3 stalks celery, diced
  • 4 cups vegetable broth
  • 1 can 98% fat-free cream of chicken soup
  • 1 tablespoon vegetable bouillon
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried parsley flakes
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

    1. Definitely. Put all ingredients in slow cooker and cook on low for 3 to 4 hours or until chicken reaches 165. Thanks!

  2. I can’t wait to try this! Soup is going to really help me with WW, I hope! What is the poultry setting? Would that be HIGH for 18 minutes?
