Weight Watchers Chicken Corn Chowder Recipe

While most chowder would include cream, I still find this to be a delicious option without the cream.  This Weight Watchers friendly chicken corn chowder uses a cream soup as a thickener that also adds great flavor alongside the vegetables.

Ingredients for Chicken Corn Chowder:

1 pound boneless skinless chicken breasts, cut into 1″ chunks
1 cup frozen whole kernel corn
1/2 cup carrots, diced
3 stalks celery, diced
4 cups vegetable broth
1 can 98% fat-free cream of chicken soup
1 tablespoon vegetable bouillon
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried parsley flakes
1/2 teaspoon salt
1/2 teaspoon black pepper

Directions for Chicken Corn Chowder:

Place chicken pieces in bottom of Instant Pot Liner
Add in seasonings, vegetables, cream soup, bouillon, and broth.
Stir to combine, and set lid to seal.
Cook on poultry setting for 18 minutes.
Once the cooking cycle has completed, allow to naturally pressure release for 5 minutes.
Release remaining pressure and serve.
