When I am feeling lazy and don’t want to stress about cooking, I know I can always go back to this as a meal option.  I keep chicken, canned beans, frozen corn, and salsa on hand at all times. So, last minute dinner is easy and done in just a few minutes when I use my Instant Pot.

Ingredients for Fiesta Chicken Recipe:

  • 1 pound boneless skinless chicken breasts
  • 1 jar salsa
  • 1 1/2 cups black beans, drained and rinsed
  • 1 1/2 cups frozen whole kernel corn
  • 1 cup water

How to make this Instant Pot fiesta chicken: 

  1. Combine all ingredients in Instant Pot Liner
  2. Place lid and set to seal
  3. Cook on poultry setting for 18 minutes
  4. When cooking cycle is complete, allow pressure to naturally release for 5 minutes then quick release any remaining pressure.
  5. Shred chicken and serve

You can also top this with avocado, green onions, nonfat plain greek yogurt, or fat free sour cream. Cheese is also good!

If you want to make this in the crockpot you can easily do that by combining all the ingredients and cooking for about 6 hours on low or until chicken is cooked through. Why does this not show up on the WW site to log the food points? I have done this many times just in a stock pot on the stove top, just do not put too high of heat. Perfect every time.
