Weight Watchers Fiesta Chicken Recipe
When I am feeling lazy and don’t want to stress about cooking, I know I can always go back to this as a meal option. I keep chicken, canned beans, frozen corn, and salsa on hand at all times. So, last minute dinner is easy and done in just a few minutes when I use my Instant Pot.
Ingredients for Fiesta Chicken Recipe:
- 1 pound boneless skinless chicken breasts
- 1 jar salsa
- 1 1/2 cups black beans, drained and rinsed
- 1 1/2 cups frozen whole kernel corn
- 1 cup water

How to make this Instant Pot fiesta chicken:
- Combine all ingredients in Instant Pot Liner
- Place lid and set to seal
- Cook on poultry setting for 18 minutes
- When cooking cycle is complete, allow pressure to naturally release for 5 minutes then quick release any remaining pressure.
- Shred chicken and serve

Why does this not show up on the WW site to log the food points? I have done this many times just in a stock pot on the stove top, just do not put too high of heat. Perfect every time.
