Can I make this into a healthy chicken soup?

Yes you can! This fiesta chicken is such a versatile dish. You can definitely make this into a fiesta chicken crock pot recipe as well.  Add an additional 3 cups of vegetable or chicken broth, I’d serve the soup with tortilla strips or crackers. You can also top this with avocado, green onions, nonfat plain greek yogurt, or fat free sour cream. Cheese is also good!

Is there a fiesta chicken crock pot recipe?

If you want to make this in the crockpot you can easily do that by combining all the ingredients and cooking for about 6 hours on low or until chicken is cooked through. You could make this fiesta chicken crock pot friendly by doing the chicken ahead of time, makes it so quick and easy to throw it together and just put it on low or warm for a few hours until it’s all combined and ready to go.

Why does this not show up on the WW site to log the food points? I have done this many times just in a stock pot on the stove top, just do not put too high of heat. Perfect every time.

This was great! I added chicken broth instead of water to give it a little extra flavor and it was awesome. Thank you so much for the recipe!
