Weight Watchers Mediterranean Salad Recipe

This Mediterranean salad recipe is light and delicious. It’s packed with all of the fresh summer flavors that I love. All of the ingredients are whole foods and super fresh you can’t go wrong! The whole family will love this recipe and they’ll never know that they’re eating something healthy.

Salad Ingredients:

  • 2 large tomatoes
  • diced 1 cucumber
  • diced 1/2 red onion,
  • diced 1 red bell pepper
  • diced 1 yellow bell pepper

Dressing:

  • 3 tbsp olive oil
  • 1 lemon, juiced
  • a pinch of salt and pepper
  • cilantro,
  • parsley,
  • mint 

The directions are very simple. Place all the salad ingredients into a large bowl and set aside. In a small mixing bowl, combine your olive oil, lemon juice, salt and pepper, and your herbs and mix until combined.

Gently pour the olive oil dressing onto the salad ingredients and mix until combined.

Ingredients

  • 2 large tomatoes, diced
