You can add more fresh herbs and spices for even more bold flavors.

Weight Watchers Mediterranean Salad Recipe

This mediterranean salad recipe is light and delicious. It’s packed with all of the fresh summer flavors that I love. Because all of the ingredients are whole foods and super fresh this time of year  you can’t go wrong! The whole family will love this recipe and they’ll never know that they’re eating something healthy.

Salad Ingredients:
2 large tomatoes, diced
1 cucumber, diced
1/2 red onion, diced
1 red bell pepper, diced
1 yellow bell pepper, diced

Dressing:
4 tsp olive oil
1 lemon, juiced
a pinch of salt and pepper
cilantro, parsley, mint to mix into the dressing

Directions:
Place all the salad ingredients into 1 large bowl and set aside
In a small mixing bowl, combine your olive oil, lemon juice, salt and pepper, and your herbs and mix until combined
Pour the olive oil dressing onto the salad ingredients and mix until combined.

Ingredients

Salad Ingredients:

  • 2 large tomatoes diced
  • 1 cucumber diced
  • 1/2 red onion diced
  • 1 red bell pepper diced
  • 1 yellow bell pepper diced

  • 4 tbsp olive oil
  • 1 lemon juiced
  • a pinch of salt and pepper
  • cilantro parsley, mint to mix into the dressing

Instructions
