 Easy Weight Watchers Pepperoni Pizza Casserole is my new favorite comfort food this month. It’s a combination of macaroni and cheese and pizza! Do I need to say more! Not only is it easy and delicious, but it’s also Weight Watchers friendly! It’s a winner all the way around! Grab your favorite plate, a big spoon and dig in! Weight Watchers Pepperoni Pizza Casserole Recipe

Each Weight Watchers Pepperoni Pizza Casserole should be divided into 12 equal servings. This will probably yield you about one cup per serving. Unfortunately, I don’t accurately measure my casseroles like I probably should.

Weight Watchers Pepperoni Pizza Casserole Ingredients

  • 1 lb ground lean ground turkey (Use 99% fat-free and it lowers points)
  • A medium onion, chopped
  • 1 clove garlic, minced
  • 2 teaspoons olive oil
  • 30 oz hunts canned tomato sauce (2 small cans) 
  • 1 teaspoon Italian seasoning
  • 12 ounces low carb rotini pasta,
  • 1 cup shredded reduced-fat mozzarella

Weight Watchers Pepperoni Pizza Casserole Recipe  

Easy Weight Watchers Pepperoni Pizza Casserole Instructions

  1. Preheat oven to 350
  2. Cook pasta according to package and drain.
  3. Heat olive oil over medium heat and saute ground turkey, onion, garlic, in a large skillet until meat is cooked.
  4. Drain.
  5. Spray a 9 x 13 pan with cooking spray.
  6. In a medium bowl mix cooked pasta, meat mixture, sauce, 1 cup of cheese, 16 pepperoni and Italian seasoning.
  7. Mix well.
  8. Spread pasta mixture evenly in pan.
  9. top with remaining cheese, pepperoni, and olives.
  10. Cover with foil and bake for 20 minutes
  11. Uncover and bake an additional 10 minutes until heated through.
  12. Cut into 12 equal servings.
  13. Enjoy!

 

Tips for lowering points 

Using canned tomato sauce, lean ground turkey (or chicken) and no fat cheese help make this a delicious low point casserole. If you use 99% fat-free turkey you can lower the points. The serving size is one cup. Serve with a low point side or green salad for a filling low point dinner.

Topping Suggestions for Pepperoni Pizza Casserole

 I really like to add spinach, broccoli, and mushrooms to pizza. Thankfully, those are all zero points on the SmartPoints plan!! Ingredients

  • 1 lb ground lean ground turkey 97% lean
  • 1 medium onion, chopped

  • 1 teaspoon Italian seasoning
  • 8 ounces rotini pasta
  • 1 cup shredded reduced-fat mozzarella cheese
  • 1 cup no-fat mozzarella cheese
  • 32 slices of turkey pepperoni, divided (approx 2 oz)
  • 2 TBSP sliced black olives
  • top with additional zero point vegetables if you desire

    Most of your recipes have nutrional info. This one doesn’t and my daughter tracks calories, not SP. Do you have the nutrional info available?

    Very good! Used lower calorie pasta. Added mushrooms to the ground turkey, pasta & sauce mixture. Also added green peppers to the top. My husband had an additional 1/2 serving. This goes in my keeper file 🙂

    I’ve noticed several of the WW pizza recipes say to use pasta sauce, not pizza sauce. Why is this? Ty!

    I made this for meal prep 2 weeks ago. I portioned it, kept a couple for lunches and froze the remaining containers. 1. I made several coworkers, both mine AND my husband’s, quite jealous of our lunches. 2. It freezes quite nicely! 3. It’s really very tasty! Thanks so much, this is going in my tried and true collection. (If I had such a collection in a pretend-highly organized land…)
