Cashew Chicken Stir Fry

Ingredients

  • 2 Tbsp Vegetable Oil
  • 1 tsp Sesame Oil
  • Tbsp Ginger grated
  • 3 cloves Garlic chopped
  • 1 lb Chicken Breasts boneless, skinless, ½ inch pieces
  • 1 large Sweet Red Pepper 1 inch pieces
  • 2 c Broccoli Florets
  • 2 Tbsp Soy Sauce low sodium
  • 20 Cashews dry roasted, salted, roughly chopped

Instructions

  • Heat your skillet over high heat with 1 teaspoon vegetable oil and 1/2 teaspoon sesame oil. Add the ginger, garlic and chicken. Cook for about 4 minutes until browned. Remove and set aside for later use.
  • Next add the rest of the oil and vegetables to the skillet and cook for about 3 minutes.
  • Add the chicken back into the skillet and add the soy sauce. Cook for about 2-3 minutes until chicken is cooked through.
  • Sprinkle the cashews on top and serve!
