Baked Strawberry Donuts Recipe

It’s almost donut day, are you ready? Ready to feast on lots of goodies on Fat Tuesday such as these baked strawberry donuts!

These recipe, maybe a bit easier on the waistline than the traditional fried donut or Fastnacht (also spelled Fasnacht, Faschnacht, Fosnot, Fosnaught, Fausnaught.) Fastnacht Day is a big deal in PA!

You can find donuts for sale at the neighborhood store, most local churches and most coffee shops. A PA Dutch Fastnacht is traditionally made with potatoes, so it’s also known as a Potato Donut.

If you ever visit the PA Farm Show, the Potato Donut is a hot seller. The donuts are fried than served plain or dusted with powdered sugar.

Of course we will be celebrating, Carnival or Shrove Tuesday, with the eating of a celebratory donut.  I promised my co-workers I was going to bring a batch of Baked Strawberry Donuts to share.

I have never been a big fan of the fried donuts and I know my waistline will definitely appreciate the baked donuts. No matter how you celebrate on Fat Tuesday, eat at least one good donut, if for no reason at all, just because!

This recipe makes 6 donuts. You will have to double your batch to yield a good dozen donuts to share. A Wilton Nonstick 6-Cavity Donut Pan was used to make this batch of donuts. It was less than $10 at Amazon with FREE shipping. I bet the local big box stores carry them too. Most times you’ll probably want at least a dozen donuts, so you may as well have 2 pans on hand.

You will need the following ingredients to whip up these Strawberry Baked Donuts;

  • 1 cup all-purpose flour
  • 6 tablespoons sugar
  • 1 teaspoon baking powder
  • 4 tablespoons vanilla Greek yogurt
  • 2 tablespoons milk
  • 1 egg
  • 1⁄2 teaspoon vanilla extract
  • 1 tablespoon unsalted butter, melted

Truth be told, these donuts are good without the strawberry glaze, but the glaze just makes them even better!

To make that delicious Strawberry Glaze, you will need a food processor and the following ingredients;

  • 4 strawberries
  • 1 tablespoon strawberry jam
  • 1-2 cups confectioners’ sugar, sifted

Grab a Wilton Nonstick 6-Cavity Donut Pan,  mixing bowls, measuring spoons, measuring cups and a pastry bag or large ziploc bag and you’ll be ready to mix up the ingredients.

Preheat oven to 325°F.

Lightly coat the donut pan with vegetable oil or non-stick spray.

In a large bowl, mix together flour, sugar, and baking powder.

 In a small bowl, whisk together yogurt, milk, egg, vanilla and melted butter.

Slowly mix wet ingredients into dry – just until fully combined (do not overmix).

Use a pastry bag fitted with a large round tip (or Ziploc bag with corner cut off) to pipe the batter into a 6-donut pan.

Fill the cavities about 2/3 full.

Bake 10-12 minutes, or until donuts are set and golden brown.

Strawberry Glaze

 Slice strawberries and puree with 1 tablespoon strawberry jam. (works best in food processor)

Slowly stir in 1 cup sifted confectioners sugar, adding more until you reach desired thickness and consistency.

After donuts have cooled, dip donuts into strawberry frosting 1-3 times, depending on desired thickness.

Donuts are best served immediately. Store leftovers in airtight containers for up to 2 days. 

***You may freeze the donuts (glazed or unglazed) for up to 2 months. Thaw overnight in the refrigerator and warm to your liking.
