Expert Tips
I think if they come out to 48 mini muffins then you would just consider 2 muffins a serving and go from there! Sometimes mini muffins are a little more satisfying. They’re also nice if you have little ones in the house who like to have a snack that is just their size!
Storage suggestions
To keep these muffins fresh, keep them in an airtight container. You can keep them at room temperature for up to 3 days, or in the freezer for up to 3 months!
Reheating Tips

Common Questions
Pumpkin is good for you! It’s awesome for your heart and skin especially because it’s loaded with vitamins, minerals, and antioxidants.
Another benefit of using pumpkin in recipes like these muffins is that it’s low in calories and the antioxidants are great for keeping your immune system boosted and functioning properly.
Pumpkin, even canned pumpkin, contains a lot of fiber as well, that’ll help keep you full longer, aid in lowering cholesterol, and of course it’s tasty!
If you want to make these into mini muffins I wouldn’t see why that wouldn’t work. I’m sure they’ll fine. Just keep in mind that you’ll have to adjust the servings and the nutrition facts if you don’t end up with an even number.

How many points is each muffin?
With personal points you will have to calculate that yourself. Thanks
I have a gluten free spice cake mix (namaste brand) but it is larger than cake mixes are now since they’ve been shrunken in ounces. This one is close to 20 ounces versus 15.? For regular cake mixes. That said, wondering if I need to add more pumpkin for the larger mix?
Thanks!
I really have no idea how to adjust the recipe with a bigger mix. Sorry.
What size can of pumpkin for muffins?
15 oz Thanks! We will add that.
