This easy to make and refreshing summer cantaloupe salad is great for mixing up your salad routine and trying something a little different!
Cantaloupe is a great addition to any kind of salad because it’s mildly sweet but not too overpowering in flavor. Adding some fruit to a salad is a great way to give it more texture, variety, and flavor.

This cantaloupe salad uses fresh mint, brie wedges, cantaloupe and cucumbers and it comes together similarly to a blueberry watermelon salad or tomato salad. That said, it’s not like a traditional salad that is mostly lettuce.
I like making a variety of vegetable salads because sometimes you just don’t feel like dealing with all of that lettuce, right? This salad is a good one for those days when you need something different but something that is still healthy and suitable for Weight Watchers and other healthy eating plans.

What do I need to make fresh cantaloupe salad?
For the salad we will be using cantaloupe, fresh mint, cucumber, and brie. For the dressing we will be using golden balsamic vinegar, olive oil, basil, sea salt flakes, and fresh cracked black pepper!
It’s a pretty simple list of ingredients but it’s a nice, fresh, flavorful preparation that really comes together nice. Nothing too tricky or hard to find either which is always nice for a carefree weekday meal.

How to make this tasty summer salad:
In a small bowl whisk together dressing ingredients until well combined, set aside
In a large bowl combine cantaloupe slices, cucumber slices, and half of the chopped mint
Drizzle dressing over salad and toss to coat
Plate and top with bits of brie and the remaining chopped mint
Serve and enjoy!

- ¼ cup mint leaves, chopped
- Brie wedges
- ¼ cup golden balsamic vinegar

- 1 teaspoon basil
- Sea salt flakes, to taste
- Fresh cracked black pepper, to taste
