Can I make this salad recipe in advance?

I wouldn’t recommend making this one in advance. You can absolutely mix up the dressing and slice/chop all the veggies in advance, just keep them stored separately until you are ready to serve your Weight Watchers cucumber salad.

Once the dressing mixes with the vegetables it’s best to serve this one up and enjoy it. If you need to make it in advance just prep the ingredients and mix them up quickly before serving!

I like both, I use dill in both of my cucumber salad recipes, this creamy version is great as a side dish, on its own, and for snacking. I love creamy cucumber salad and it just adds a hint of something extra to the recipe that is great for picnics, parties, holidays, and even backyard BBQ’s!

This recipe uses cucumbers, red onion, fresh dill, minced garlic, and sour cream. You will also need some salt and some white vinegar.

That is everything you will need to make this delicious salad recipe. It’s super simple and to the point. If you grow cucumbers in your garden and are feeling overwhelmed by them right about now…don’t worry…that will all change once you serve up a batch of this cucumber salad.

How to make this easy summer salad:

This recipe has three steps. There is nothing much too it and you’ll love making this after you have done it a time or two you will be a pro! It comes together really quickly which makes it great for picnics and parties that need a last minute dish to share.

Slice the red onion into half moons. Peel and slice the cucumber into about ¼-inch slices. Set aside.

In a medium bowl, combine the remaining ingredients. Mix well.

Add the onion and cucumber. Stir or toss to coat. Enjoy!

Other tips for the best cucumber salad ever:

If you like a bit of sweetness to your creamy cucumber salad, you can add 1 tablespoon granulated sugar to the dressing mix. 

If you don’t have garlic on hand, a ½ tablespoon of garlic powder will do the trick.

If you wanted to make this even lower in points you would need to use fat free plain Greek yogurt in place of the light sour cream, it definitely has a different taste but if you don’t mind it that’s a fine swap to make if you feel it’s necessary.

  • 2 Large Cucumbers
  • ½ Red Onion
  • ½ Cup Light Sour Cream
  • 2 Tablespoons Fresh Dill, minced
  • 1 Tablespoon White Vinegar

  • 2 Teaspoons Salt
