This easy Weight Watchers corn soup comes together quickly and easily thanks to the Instant Pot! It’s an awesome weeknight dinner recipe for the whole family.

My Weight Watchers Instant Pot corn soup is vegan, simple to make, and tasty enough to serve even on special occasions. This simple corn soup is wholesome and hearty. Of course you could also throw in some chicken if you wanted to bulk up and add some protein but it’s definitely not necessary!

Weight Watchers corn soup that you make in the Instant Pot will use red potatoes, carrots, celery, frozen corn, vegetable broth, turmeric, paprika, rosemary, salt and pepper. That’s it!

Can you believe it?! Nothing tricky to find, nothing difficult, all relatively simple ingredients and they’re all delicious and wholesome! This recipe is packed with nutrition and tastes great, too.

How to make Instant Pot corn soup:

Let’s jump to it! This recipe is delicious and I don’t want to wait a single second longer to share the magic with you. Truly the Instant Pot does the hard work. You’ll also need an immersion blender, tho you could just dump it all into a regular blender and give it a whirl to smooth it all out in the end!

Add celery, carrots, potatoes, and corn to the pot. Pour in vegetable broth just to barely cover the vegetables.

Add in turmeric, rosemary, and paprika. Add in salt and pepper. Stir well.

Place lid on the instant pot. Set valve to sealed position. Manual or pressure cook for 5 minutes. Once the pot stops counting release pressure.

Using an immersion blender blend soup for about a minute. This will give it the creamy texture needed.

Can I make substitutions when preparing this corn soup recipe?

Of course, the great thing about soup recipes is that they’re really versatile and usually pretty easy to mess with without fear of a flop!

If you make changes to this recipe make sure you recreate the recipe on the Weight Watchers website so that you get accurate point counts.

Some changes you might consider are adding protein of your choice. Chicken or turkey would probably be great! You could always just try out this chicken corn soup recipe.

Other changes include leaving out the rosemary if you aren’t a fan, it won’t impact the recipe (tho it will remove the rosemary flavor) and you can always add more veggies if you want to bulk up the recipe without adding a lot of points to the recipe.

Finally, since this is a vegan recipe, you can always keep it as it and serve it over rice for a more hearty meal!

Ingredients

  • 4 red potatoes; diced
  • 4 carrots; diced
  • 3 stalks of celery; diced
  • 1 bag frozen corn
  • 1 box vegetable broth
  • 1 teaspoon turmeric
  • 2 teaspoons paprika
  • 3 sprigs rosemary
  • 1 teapsoon salt
  • 1 teaspoon cracked black pepper

Instructions
