This super easy Weight Watchers tomato salad recipe is quick, easy, and low in points. It’s a great salad topper or you can eat it alone with chips, crackers, or crunchy veggies!

This recipe is awesome for topping salads, throwing on top of burgers, adding to your salad jars, or to just scoop onto crackers or crunchy veggies for a snack in the middle of the day. I like to make a batch for parties and gatherings so I know there’s something I can enjoy!

This is a really simple recipe. There’s nothing crazy happening and you can have it ready in just a few minutes. I like to give it at least an hour in the refrigerator but you can let it sit overnight too for even more flavor and softer tomatoes!

Which tomato is best for this salad?:

This recipe uses fresh, garden tomatoes to give it a delicious base. If you don’t have access to a garden visit your local farmer’s market or grocery store and pick up some Roma tomatoes for the best flavors. Heirloom tomatoes would be my second choice if you can’t find ripe Romas.

Of course, you know this Italian-style tomato salad starts with fresh and ripe tomatoes Once you have the tomatoes you’ll need fresh basil, shallots, garlic, olive oil, low-fat Italian dressing (I used the Olive Garden type), Italian seasoning, red wine vinegar, and salt and pepper to taste!

How to make tomato salad for Weight Watchers:

You’ll be shocked at how easy it is to make this fresh salad. It’s bright and colorful and it’s even better after sitting overnight in the refrigerator!

We’re taking some really simple ingredients and whipping them into a magical salad that just tastes like summer. It’s so fresh and delicious you’ll want to add it to everything. Try putting it on burgers with some mozzarella cheese for a Caprese burger!

Toss it onto some grilled chicken for a fresh topping and unique addition to your plate. The possibilities are truly endless.

In a medium bowl add the tomatoes, basil, shallots, and garlic. 

Sprinkle with salt, pepper, and Italian seasoning.

Stir the ingredients and drizzle with olive oil, Italian dressing, and red wine vinegar.

Stir until all ingredients are covered in liquids.

Refrigerate for at least a few hours until ready to serve.

*Note the longer the tomatoes marinate, the softer the tomatoes will become. A few hours minimum, best overnight.

How long does tomato salad last in the fridge?

Fresh tomato salad doesn’t store well. Once you create the recipe and let it marinate for a few hours or even overnight, it’s ready to be served and enjoyed in one sitting.

If you happen to have leftovers, you will want to refrigerate the salad immediately and enjoy it within 24 hours for a fresh taste. One day later the salad will start to be soggy and lose its fresh flavors.

Also, don’t forget you can’t freeze tomato salad, so plan accordingly to eat it as soon as possible after serving.

  • 6 Roma Tomatoes, cut into pieces
  • 2 tablespoons fresh basil, finely chopped
  • 1 small shallot, finely diced
  • 1 clove of garlic, minced
  • 1 tbsp olive oil
  • salt and pepper
  • 2 tbsp low fat Italian Dressing
  • Italian Seasoning
  • 1/4 cup red wine vinegar

  1. In a medium bowl add the tomatoes, basil, shallots, and garlic.
  2. Sprinkle with salt, pepper, and Italian seasoning.
