We are going to dive right in since this recipe has a bunch of homemade elements. We’re making red rice, ground turkey burrito filling, and some guac spread so we have a few things to put together but it’s well worth it for these low points Weight Watchers burritos.
Ingredients for burritos on Weight Watchers:
Here’s a breakdown of what you will need for this ground turkey filling and the wraps themselves for the best Weight Watchers burritos.
You will need ground turkey, be sure to use extra lean turkey or ground turkey breasts, olive oil, cayenne pepper, salt, garlic powder, onion powder, cumin, tomato bouillon, diced white onion, diced green peppers, diced jalapeños, and wraps. Xtreme Wellness wraps are great for Weight Watchers because they are low in points!
Making the ground turkey filling for Weight Watchers burritos:
Heat the olive oil in a large frying pan over low to medium heat.
Add the diced onion to the pan and let it cook until they start to become translucent. Then add the bell pepper and jalapeño to the pan and cook until they become tender.
In the meantime, add the turkey to a medium/large bowl and season with the cayenne, salt, garlic powder, onion powder, cumin powder and tomato bouillon and mix it all together.
Once the veggies are tender, add the turkey to the pan and cook through.
Drain the juices from the turkey and remove it from the pan, and serve immediately.
Ingredients for Mexican red rice:
We are going to make a Mexican red rice for this delicious Weight Watchers ground turkey burritos recipe. You will need cooked jasmine rice, chicken broth, white onions, garlic, Roma tomatoes, salt, tomato bouillon, and olive oil!
This is the rice mixture we will be using in our burritos for Weight Watchers. If you don’t track points you can easily swap this out for a premade seasoned rice but I like to make my own so I know exactly how many points to track for my recipes!
How to make seasoned rice for a burrito filling:
Start by adding the olive oil to a medium pot and heating it over medium heat.
Once it’s hot, add the rice and salt and stir well to coat all of the rice in oil. Let it cook and stir every two minutes until the rice starts to turn a light brown color.
Add the onion, chicken broth, garlic, tomatoes and tomato bouillon to a blender and blend until smooth.
Once the rice has browned up a bit, pour in the tomato mix. (Be careful, as the water will start to pop and sizzle.)
Bring the rice to a boil over high heat and reduce to low medium heat. Cover with a lid and let it cook for 20 minutes.
Once it has cooked, remove the lid and check to see how much moisture is left. If there is a lot, turn the heat down and let it cook with the lid off for 3-5 more minutes. If the moisture is gone, remove the lid, turn the heat off and let it sit for five to six minutes.
Fluff the rice and serve.
Ingredients for a homemade guac:
You will need a ripe avocado, some garlic powder, chili powder, and lime juice. Add some salt to taste for this easy guacamole spread that goes great with Weight Watchers turkey burritos.
This is a really simple guacamole recipe that doesn’t have onions which is great if you don’t like to eat raw onions. You can add some if you want but for me it’s better without!
How do I make homemade guacamole for Weight Watchers?
Remove the peel and smash the avocado in a small bowl.
Add the garlic powder, chili powder, lime juice, and salt to the bowl, and mix thoroughly. Allow to rest for five to ten minutes to allow the garlic powder and salt to incorporate well.
What do I need when making these turkey burritos?
When you have prepped the filling ingredients you will need the tortillas, ground turkey mixture, guacamole, and rice along with lettuce, tomatoes, shredded cheese, and any other additional toppings you want to add.
If you add extra toppings you’ll need to add those to the points that you track for this meal!
How to assemble these tasty WW burritos:
Start by warming the tortillas in a pan or in the microwave.
Spread a layer of guacamole into the middle of the tortilla leaving space to close it.
Next, layer the rice, turkey, cheese, lettuce and tomatoes.
Fold and roll up the tortilla and serve immediately with salsa or sour cream.

- - 16 ounces of ground turkey
- - 2 tablespoons of olive oil
- - 1 teaspoon of cayenne pepper powder
- - 1 teaspoon of salt
- - 1 teaspoon of garlic powder
- - 1 teaspoon of onion powder
- - 1 teaspoon of cumin powder
- - 1 teaspoon of tomato bouillon
- - ½ diced white onion
- - ½ diced green pepper
- - 1 diced jalapeño
- - 10 xtreme wellness wraps
- - 1 cup of shredded iceberg lettuce
- - 1 diced tomato
- - ½ cup of low fat sharp cheddar cheese shredded
- - 1 ripe avocado
- - ½ teaspoon of garlic powder
- - ½ teaspoon of chili powder
- - Juice from ½ lime
- - Salt to taste
- - 1 cup of Jasmine rice
