This delicious and healthy Weight Watchers recipe is low in smart points! Most of the points they do have are coming from the potatoes and the butter which is to be expected.

If you decide to change or alter this recipe make sure to recalculate the points for yourself.

How do I make these healthy mashed potatoes?

It’s so easy! You’ll love this. In just two or three simple steps you have these chunky mashed potatoes ready for the table.

First you need to put all the potatoes in a large saucepan and cover with water. Bring to a boil and then reduce heat to medium and simmer for about 15 minutes.

Make sure the potatoes are tender, add more time if necessary.

Here we see the finished chunky mashed potatoes.

Next we drain off the water and put all the potatoes back into the saucepan. Add in the buttermilk and butter. Coarsely mash the potatoes and then top with chopped chives, salt, and pepper.

This recipe will serve about 8 people in 1/2 cup serving sizes!

Ingredients

  • 1 1/2 Pounds Youkon Gold Potatoes
  • 3/4 Cup Low-Fat Buttermilk
  • 2 Tbsp Unsalted Butter, Warmed
  • 1 Tsp Salt
  • 1/2 Tsp Black Pepper, Fresh Ground
  • 1/4 Cup Chives, Chopped

Instructions

  1. Bring potatoes to a boil. Reduce heat and simmer on medium for 15 minutes or until tender. 
  2. Coarsely mash potatoes with buttermilk and butter. Add in chopped chives, salt, and pepper.
