How do I make these healthy mashed potatoes?

It’s so easy! You’ll love this. In just two or three simple steps you have these chunky mashed potatoes ready for the table. First you need to put all the potatoes in a large saucepan and cover with water. Bring to a boil and then reduce heat to medium and simmer for about 15 minutes. Ingredients

  • 1 1/2 Pounds Youkon Gold Potatoes
  • 3/4 Cup Low-Fat Buttermilk
  • 2 Tbsp Unsalted Butter, Warmed
  • 1 Tsp Salt
  • 1/2 Tsp Black Pepper, Fresh Ground
  • 1/4 Cup Chives, Chopped

Instructions

  1. Bring potatoes to a boil. Reduce heat and simmer on medium for 15 minutes or until tender. 
  2. Coarsely mash potatoes with buttermilk and butter. Add in chopped chives, salt, and pepper.
