Weight Watchers Candied Sweet Potatoes in the Instant Pot

This classic candied sweet potatoes recipe was handed down to me by my grandmother.  The best part is, that 1/2 cup serving is low in points! As sweet and yummy as these are, it still isn’t high in points. That makes it a perfect option alongside turkey and vegetables for the holidays.

Ingredients for Candied Sweet Potatoes

Here is what you’ll need to make these candied sweet potatoes in the Instant Pot. The recipe uses sweet potatoes, orange juice, blackstrap molasses, cinnamon sugar, and vanilla. Of course you can make some changes if you want lower the points.

In that case I would swap out the sugar for stevia and use the lowest point orange juice you can find. Everything else is kind of important for the taste of the finished sweet potatoes!

Directions for Candied Sweet Potatoes:

Prepare Instant Pot liner with 1 cup water in bottom and trivet placed.

Prepare Instant Pot safe bowl or casserole dish by spraying with non-stick spray.

Peel and dice sweet potatoes into 1/2″-1″ chunks.

Pour into casserole dish and add cinnamon, sugar, molasses, vanilla, and orange juice.

Mix until well combined.

Place into Instant Pot on top of the trivet.

Place the lid and set to seal.

Cook on manual pressure for 20 minutes.

NPR (natural pressure release) for 8 minutes.

Alternative cooking methods: 

You can also place this casserole into the oven and bake at 375 degrees for 1 hour.

This makes a great side dish for the holidays, and ends up being perfectly tender and well seasoned with this delicious combination of flavors.

If you prefer less citrus, you can easily add just a bit of water instead of the orange juice.  I find the added flavor is light and refreshing alongside often heavier dishes at a holiday table.

  • 1/2 cup orange juice
  • 1 tablespoon blackstrap molasses

  1. I didn’t have, and couldn’t find, blackstrap molasses in stores near me, so I used regular molasses. And since I didn’t use regular white sugar in the recipe, I used 1/2 cup of granulated Monk Fruit sweetener in the place of that. I also used 50 calorie Light OJ to. I think next time I will use even less OJ than what this recipe calls for, as I did not like the overwhelmingly citrus taste of these sweet potatoes. I’ll maybe use more Monk Fruit sweetener also to give the sweet potatoes even more sweetness.
