What do I need to make these chicken lime tacos for Weight Watchers?

This recipe uses really simple and wholesome ingredients. All the fresh flavors come together so well to make these delicious tacos the real star of the night.

You’ll need boneless skinless chicken breast, sugar, lime juice, red wine vinegar, garlic, onions, and cilantro. We will also use salt, black pepper, flour tortillas, shredded lettuce, tomatoes, salsa, and low-fat shredded Monterey jack cheese.

If you aren’t on Weight Watchers or if you have some extra points you can also add in some low-fat sour cream or plain fat-free Greek yogurt for a creamy topping!

How to make Weight Watchers chicken tacos:

These chicken tacos are really easy to prepare. It’s a simple recipe, truly, there’s nothing crazy happening here. Check it out and see how easy it is to make a healthy Weight Watchers recipe for taco night!

Using a medium-sized skillet, add chicken and sauté over medium-high heat for about 15 minutes or until golden brown

Cooking the chicken.

Add in lime juice, sugar, red wine vinegar, minced garlic, cilantro and green onions.  Sprinkle it with salt, and pepper while cooking. Reduce heat and simmer until the chicken has absorbed wet ingredients.

Warm tortillas in a small skillet flipping on each side or place in a warm oven for a few minutes.  

Each taco will use 1/10th of the meat mixture.  Fill each tortilla with chicken and add in lettuce, tomatoes, and cheese, and top with salsa if desired.

Ingredients

  • 1½ lbs boneless, skinless chicken breast (cut into small cubes)
  • 1 tsp sugar
  • ½ lime juiced (about 1 tsp.)
  • ⅛ cup red wine vinegar
  • 2 cloves garlic (minced)
  • 2 green onions chopped
  • ½ tsp. salt
  • 1 tsp. chopped fresh cilantro
  • ½ tsp. ground black pepper
  • 10 flour tortillas – street taco size (6 inch)
  • ¼ cup shredded lettuce
  • 1 tomato diced
  • ¼ cup salsa
  • ¼ cup shredded Monterey Jack cheese

Instructions
