How to make low carb cauliflower stuffing:

It is actually a lot easier than you might think to make a low carb and weight watchers stuffing recipe. There’s only a handful of steps to this recipe and it actually cooks for less time than a regular stuffing recipe! It’s such a great and easy low carb recipe for the holidays.

Once you try it out you’ll be amazed that you can do so much with cauliflower. You won’t even be missing the bread in this stuffing recipe. It’s packed with flavors and textures, everyone will love it!

Melt butter in large deep skillet over medium heat.

Add chopped celery, carrots and onion and cook for about 8 minutes, stirring occasionally.

Add chopped cauliflower and mushrooms, and stir.

Add salt and pepper and continue to cook for about 10 additional minutes.

Add chicken stock, fresh and dry herbs and stir well. Taste and add additional salt and pepper if necessary.

Cover and simmer until liquid is absorbed (about 12-15 minutes), stirring occasionally.

Serve warm.

Ingredients

  • 1 cauliflower, chopped then pulsed 4-5 times in a food processor
  • 2 celery stalks, sliced in half lengthwise and chopped finely
  • 2 carrots, peeled and sliced in half lengthwise and chopped finely
  • 1 onion, chopped small
  • 2 cups mushrooms, chopped
  • 4 tablespoons butter
  • ½ cups chicken stock, or vegetable stock
  • ¼ cups fresh parsley
  • 1 tablespoon fresh rosemary
  • 1 teaspoon ground sage
  • Salt and pepper to taste

Instructions

  2. This was a huge success at Thanksgiving! Everyone asked for the recipe. Prepped all the veggies the day before so all we had to do was cook it while the turkey rested.
