Mushroom Chicken Quinoa Bake

Casseroles are some of my favorite dishes to prepare. What’s better than having a full meal in one dish? This chicken mushroom quinoa bake recipe is sure to bring all your family to the table in anticipation. It’s a step out of the normal casserole dishes, using quinoa rather than rice or beans. The mushrooms add lots of additional flavor too. Bake this up for a perfect comfort food that will satisfy all.

Mushroom Chicken Quinoa Bake

Ingredients

2 C Chicken Stock
1 C Cream of Mushroom Soup
1 C Mushroom pieces (I used two cans as I like mushrooms!)
1 C Quinoa
¼ C Onion, diced
2 Tbsp Cornstarch
1 Tbsp Water
3 Tbsp Parmesan cheese
1 tsp Garlic, minced
2 tsp Thyme, dried
1 C Peas
½ C Milk
1 lb Chicken breast, sliced into strips
2 tsp Seasoned Salt
as desired Pepper

Directions

1. Rinse quinoa

2. In a large pot, add stock and quinoa and bring to boil
3. Turn down heat and simmer covered for approximately 15 minute or until liquid is absorbed. Set aside
4. While cooking quinoa, season the chicken strips with seasoned salt. In a fry pan, saute the chicken with the garlic and onion, until the onion is soft.

5. Add the mushroom soup, mushroom pieces and milk to the saute pan and bring back to a low boil, stirring often.
6. Make a slurry of the cornstarch and water, and add it to the chicken. Stir to thicken and turn down the heat to low.
7. Add pepper, thyme and peas.
8. Grease a 7 x 9 baking dish and place the quinoa in the pan loosely

9. Pour the chicken and mushroom mixture over the quinoa evenly.
10. Sprinkle the Parmesan cheese over the top of ingredients.
Bake at 350 for 30 minutes. In the last few minutes, you can broil to brown the Parmesan cheese on top.

Let the dish rest for 10 minutes before serving.
