December in PA brings with it cooler temperatures, shorter days and the end of the year hustle and bustle. As the year ends it seems like our family gets busier. (Can that really happen?) Being able to sit, regroup and enjoy some comfort food like this Spicy Chili Dog Casserole with the family, grounds me and reinforces the real importance of the holiday season, family.

Thankfully, I can stop at Walmart pick up a few canned goods, fresh produce, add meat and bring an easy and delicious Spicy Chili Dog Casserole to the table in less than 30 minute   You will need to grab a few simple ingredients, add your own fresh produce side (green beans is my favorite) and you will have a complete meal everyone will love. Chili Dog Casserole is the ultimate comfort food and you don’t have to make it spicy unless you want to.

Spicy Chili Dog Casserole Ingredients

Chili Dog Casserole Ingredients:

  • 3/4 LB Hamburger
  • 1 LB Hot Dogs or 6 to 8 leftovers. (cooked or uncooked it doesn’t matter)
  • Corn Muffin Mix
  • Onion
  • MANWICH
  • RO*TEL
  • 1/2 Cup Shredded Cheddar Cheese
  • PAM
  • Jalapeno Slices (Optional only if you want it spicy)

  Finely chop a medium onion and saute with hamburger in a frying pan sprayed with PAM non-stick spray. Isn’t PAM great? Cleaning up those pots, pans and casserole dishes is easier when I spray them with PAM. Anything that can save me time, is a friend of mine. While hamburger is frying mix cornbread as directed on package and cut hot dogs in to bite size pieces. When hamburger is done, drain grease and add MANWICH and RO*TEL. Stir well and bring to a boil over medium heat. Add hot dogs and continue to cook over medium heat until heated through. (Approx 6 minutes) Carefully spoon the corn bread mixture around the outside of edge of the pan, filling in your moat. Cook at 400 degrees for 10 minutes. Sprinkle with grated cheese and bake for an additional 8-10 minutes. While the casserole is in the oven you can prepare fresh produce to serve for a complete well rounded meal. In the produce department at Walmart, I picked up fresh green beans. I cleaned them and steamed them in the microwave. The beans added the perfect touch of color to our meal. Remove casserole from oven and top with sliced jalapenos (if desired) and serve! Spicy Chili Dog Casserole would be the perfect meal for those holiday down times or after a long day of shopping or wrapping. The flavor combos in Spicy Chili Dog Casserole takes me back to nights as a kid, eating chili dogs at the picnic table with family. Chili dogs don’t always look the best, but they always taste DELICIOUS! Adding that little bit of spice makes this casserole perfect for me.

Ingredients

  • 3/4 LB Hamburger
  • 1 LB Hot Dogs
  • Corn Muffin Mix
  • Onion
  • MANWICH
  • RO*TEL
  • 1/2 Cup Shredded Cheddar Cheese
  • PAM
  • Jalapeno Slices, Optional only if you want it spicy

Instructions

  1. Finely chop onion and fry with hamburger meat.
  2. Drain meat and add MANWICH and RO*TEL.
  3. Bring to a boil and add chopped hot dogs.
  4. Heat thoroughly (approx 6 minutes)
  5. Mix cornbread as directed on package.
  6. Transfer chili dog mixture to casserole dish or cast iron skillet keeping in middle.
  7. Carefully spoon cornbread mixture to outside edge of skillet.
  8. Bake at 400 degrees for 10 minutes.
  9. Top with grated cheese.
  10. Bake additional 8- 10 minutes.
  11. Top with jalapenos if desired.
  12. Enjoy!
