Beef Enchilada Casserole

I found this Beef Enchilada Casserole on Pinterest from TasteandTell and made it my own. It’s a family favorite that you can often find on the menu when all of the kids are home for a family dinner.

I have always been a huge fan of one dish meals and casseroles. When our kids were younger, I was a stay at home mom and money was tight. I couponed and shopped sales to save money, but many weeks we still had to scrimp on the food budget. When you cook for a big family it’s much easier to stretch a casserole than it is to stretch a meat and potatoes meal. Casseroles were a main stay.

Enchilada Casserole

When you make this casserole, you layer it up like lasagna. My kids call this Mexican Lasagna. I call it lazy mom enchiladas! I don’t have time to fill and roll tortillas to make traditional Beef Enchiladas, so casserole it is!

Easy Beef Enchilada Casserole

Beef Enchilada Casserole an easy and delicious casserole.
  • 1 pound ground beef
  • 1 white onion, diced
  • 2 TBSP Cumin
  • 2 TBSP Chili Powder
  • Hot pepper flakes (optional)
  • 1 package white corn tortillas
  • 1 19 oz Red enchilada sauce
  • 8 oz shredded Monterey Jack cheese
  • 2 Serranos chiles finely chopped
  • Cilantro, fresh, cut into very small pieces
    1 small bundle of green onion, chopped
    8 Cherry tomatoes sliced thin
    1 avocado seed and skin removed and sliced
Beef Enchilada Casserole Ingredients.

You will want to brown your meat and onions, when done, add the cumin and chili powder, hot pepper flakes (if you want it really hot) and  set aside.

Spray an oval casserole dish (approx. 11 inches long) with non-stick spray.

Spread the bottom of casserole with a thin layer of enchilada sauce. Cover the sauce with tortillas that you have warmed in the microwave.

Layer in beef mixture, sprinkle with cilantro, serrano chiles and a few spoons of sauce. Sprinkle with cheese.

Continue this process until the casserole dish is approximately 3/4 of the way full

Beef Enchilada Casserole also known as Mexican Lasagna

Top with remaining enchilada sauce. Sprinkle with any remaining cheese.

Cook at 400 degrees for 20 to 25 minutes. Internal temperature should be 165 degrees and cheese will be hot and bubbly.

Allow to cool for 10 minutes. Garnish with cilantro, cherry tomatoes, green onion and avocado.

Easy Beef Enchilada Casserole

Ingredients

  • 1 pound ground beef
  • 1 white onion, diced
  • 2 TBSP Cumin
  • 2 TBSP Chili Powder
  • Hot Pepper Flakes
  • 1 package white corn tortillas
  • 1 19 oz Red enchilada sauce
  • 8 oz shredded Monterey Jack cheese
  • 2 Serranos chiles finely chopped
  • Cilantro, fresh, cut into very small pieces
  • 1 small bundle of green onion, chopped
  • 8 Cherry tomatoes sliced thin
  • 1 avocado seed and skin removed and sliced

Instructions

  1. Preheat oven to 400 degrees,
  2. Spray a large oval baking dish with non-stick spray
  3. Cook ground beef and diced onion until it reaches 165 degrees on meat thermometer.
  4. When meat is cooked stir in 2 TBSP Cumin and 2 TBSP Chili Powder add hot pepper flakes if you really like it hot!
  5. Place tortillas on a plate, cover with a wet paper towel and microwave for 20 seconds.
  6. Pour 1/4th of the enchilada sauce into the bottom of the baking dish.
  7. Place the corn tortillas over the sauce in the bottom of the baking dish making sure the tortillas cover the whole bottom and part way up the sides
  8. Top the tortillas with meat mixture and sprinkle Serrano chiles, cheese, sauce and Cilantro ( see picture )
  9. Top with shredded cheese,
  10. Repeat layering with tortillas, meat mixture, cilantro, sauce, cheese and Serrano chiles until dish is 3/4 of the way full.
  11. Pour remaining red sauce on top of the entire filled baking dish.
  12. Top with any remaining cheese
  13. Bake at 400 degrees for 20-25 minutes.
  14. Cheese should be melted and creamy.
  15. Allow to cool for 10 minutes
  16. Garnish with fresh cilantro, green onions sliced cherry tomatoes, and avocados
  17. Enjoy!
