This recipe uses potatoes, olive oil, sea salt, yellow onion, garlic, ground turkey, diced tomatoes, salt, pepper, cheddar cheese, and toppings of your choice. Think of things like bacon bits, chopped green onions, sour cream, and chives!

How to make ground turkey stuffed potato skins:
Preheat your oven to 400 degrees F and line a baking sheet with parchment or aluminum foil.
Place the potatoes on the prepared baking sheet, at least an inch apart, and use a fork to prick holes into the potato skins.
Drizzle a half-teaspoon or so of olive oil over each potato, then use clean hands or a basting brush to rub the oil into the skins, coating evenly on all sides.
Sprinkle sea salt over the potatoes, then place them into the oven. Bake for 45 minutes to 1 hour, or until fork tender. Set aside and allow the potatoes to cool, then reduce the oven temperature to 375 degrees F.
Meanwhile, prepare the filling. In a skillet over medium heat, drizzle a couple teaspoons of oil and add the chopped onions. Saute for 3-5 minutes or until the onions become translucent.
Add the garlic and ground turkey to the pan. Cook until the turkey is browned and completely cooked through.
Add the canned diced tomatoes (see notes), salt, and pepper. Continue cooking until the ingredients are combined and warmed throughout.
Slice the baked potatoes in half and arrange skin-sides-down onto the baking sheet or in a lightly greased or sprayed baking dish.
Scoop a couple of tablespoons of potato flesh out of each potato half and set aside (see notes).
Place 2-3 tablespoons of the prepared turkey filling into each potato half, then top with a generous helping of reduced fat shredded cheese.
Return the baking sheet or dish with the filled potato skins to the oven and bake for 8-10 minutes or until the cheese is melted and beginning to brown.
Remove the potato skins from the oven and allow to cool for at least 5 minutes.
Top with sour cream and chopped green onions or chives and serve.

- Olive oil
- Sea salt
- 1 small yellow onion, chopped
- 1 or 2 cloves garlic, chopped
- 1 pound ground turkey
- 1 can diced tomatoes (do not drain!)
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 1 cup shredded reduced fat cheddar cheese
- Sour cream and chopped green onions or chives for garnish (optional)

Notes
- Remember - do not drain the canned tomatoes! The extra juice in the can will keep the filling nice and juicy while it cooks. Ground turkey can dry out easily when cooking, so you’ll need all the moisture you can get.
- You can make a small batch of mashed potatoes out of the cooked potato flesh that you scoop from the skins before filling, or if preferred, you can use a fork to mix the extra potato flesh into the ground turkey filling to add some bulk to your potato skins and make your dish more of a twice-baked-potato deal.
- If desired, you can use canned diced tomatoes with green chiles or add a packet of taco seasoning to the filling while cooking to add some Mexican-style heat to your potato skins.
