How to make a one pan turkey potato skillet:
Add 1 tablespoon of oil to a large skillet or Dutch oven over medium-high heat, and sauté for 4-5 minutes, charring it slightly. Set aside.
Add the remaining oil to the skillet and add the onions, garlic powder, salt & pepper. Cook 4-5 minutes or until the onions are translucent and begin to brown.
Add in the ground turkey and cook until it’s mostly turned white, breaking it up with your spoon as it cooks (about 4-5 minutes).
Add in the water, soy sauce and potatoes and decrease the heat to low. Cover the pot and simmer for 20 minutes or until the potatoes are fork tender.
Fold in the broccoli and serve immediately.

- ½ medium onion, chopped
- 1 teaspoon garlic powder
- ½ teaspoon salt

I made this last night and it was very good. Some changes I made were to add a beef bouillon cube to give it a bit more of a beefy flavor, omitted the salt and added some white pepper. I also substituted coconut aminos for the soy sauce as I try to avoid soy. I had a quart of potatoes that I had canned previously so used those instead of fresh. They worked just fine. Just a note, the recipe states that this is gluten free, but if you use soy sauce, it is not gluten free as soy sauce is made with wheat. You can substitute coconut aminos for the soy sauce though without changing the flavor profile.

We made this tonight and it was yummy! Even my picky teenager liked it and went back for seconds. My few changes: only 1 lb of potatoes (which was enough for us), used zucchini instead of broccoli (it's what I had and it worked perfectly), and I used Japanese BBQ sauce instead of straight soy. Thank you - will definitely make this again!
