  1. I made this last night and it was very good. Some changes I made were to add a beef bouillon cube to give it a bit more of a beefy flavor, omitted the salt and added some white pepper. I also substituted coconut aminos for the soy sauce as I try to avoid soy.
I had a quart of potatoes that I had canned previously so used those instead of fresh. They worked just fine.
Just a note, the recipe states that this is gluten free, but if you use soy sauce, it is not gluten free as soy sauce is made with wheat. You can substitute coconut aminos for the soy sauce though without changing the flavor profile.

  2. We made this tonight and it was yummy! Even my picky teenager liked it and went back for seconds. My few changes: only 1 lb of potatoes (which was enough for us), used zucchini instead of broccoli (it’s what I had and it worked perfectly), and I used Japanese BBQ sauce instead of straight soy. Thank you – will definitely make this again!
