This recipe uses olive oil, broccoli, onions, garlic powder, salt/pepper, ground turkey, small potatoes, water, and soy sauce. That’s all you’ll need for this easy to make skillet meal!

How to make a one pan turkey potato skillet:

Add 1 tablespoon of oil to a large skillet or Dutch oven over medium-high heat, and sauté for 4-5 minutes, charring it slightly. Set aside.

Cooking onions

Add the remaining oil to the skillet and add the onions, garlic powder, salt & pepper. Cook 4-5 minutes or until the onions are translucent and begin to brown.

Add in the ground turkey and cook until it’s mostly turned white, breaking it up with your spoon as it cooks (about 4-5 minutes).

Add in the water, soy sauce and potatoes and decrease the heat to low. Cover the pot and simmer for 20 minutes or until the potatoes are fork tender.

Ingredients

  • 2 tablespoons olive oil, divided
  • 3 cups broccoli, cut into 2” pieces
  • ½ medium onion, chopped
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 pound ground turkey
  • 2 pounds small potatoes, cut in fourths
  • 1 cup water
  • 2 tablespoons soy sauce

Instructions

We made this tonight and it was yummy! Even my picky teenager liked it and went back for seconds. My few changes: only 1 lb of potatoes (which was enough for us), used zucchini instead of broccoli (it's what I had and it worked perfectly), and I used Japanese BBQ sauce instead of straight soy. Thank you - will definitely make this again!
