Add 1 tablespoon of oil to a large skillet or Dutch oven over medium-high heat, and sauté for 4-5 minutes, charring it slightly. Set aside.
Add the remaining oil to the skillet and add the onions, garlic powder, salt & pepper. Cook 4-5 minutes or until the onions are translucent and begin to brown.
Add in the ground turkey and cook until it’s mostly turned white, breaking it up with your spoon as it cooks (about 4-5 minutes).
Add in the water, soy sauce and potatoes and decrease the heat to low. Cover the pot and simmer for 20 minutes or until the potatoes are fork tender.
Fold in the broccoli and serve immediately.
