Weight Watchers Taco Pie

This delicious Weight Watchers taco pie is easy to make, great for Personal Points plans on WW, and a healthy family friendly dinner option.

When it comes to making Weight Watchers dinners you can get creative! There’s no shortage of great options out there and this turkey taco pie is one of my favorites.

This family friendly Weight Watchers turkey taco pie is simple to make and serve and my family adores it, no complaints around the dinner table is always a win in my book.

Ground turkey recipes are great for Weight Watchers. I usually grab ground turkey breast because it’s lowest in points but you can also use the extra lean ground turkey options too.

Turkey taco pie is a great use for ground turkey if you have it on hand. If you don’t have ground turkey you can use ground chicken or lean ground beef. They’ll all work relatively the same in this recipe. Tho ground beef especially will have more points so keep that in mind if you are following WW.

Weight Watchers turkey taco pie is a great recipe for meal prep. The leftovers don’t usually last too long in our house but they are easy to reheat and simple to put into containers for lunches throughout the week!

What is a taco pie?

Taco pie is an easy way to serve up tacos that is pretty much mess free. It’s like making a lasagna but with taco supplies instead of classic Italian meats and cheeses with pasta.

Taco pie is a layered dinner that gets baked in the oven until it’s perfectly melty and ready to serve. It can be cut into slices and served with toppings like sour cream, salsa, etc.

Can I make this Weight Watchers turkey taco pie gluten free?

The easiest way to make this turkey taco pie gluten free is to use gluten free tortillas. Everything else in the recipe should be basically gluten free naturally. Sometimes taco seasoning from the store will have sneaky gluten hiding in the ingredients list so be sure to double check that.

When making this recipe gluten free you might have less points. Some of the gluten free tortillas are actually lower in points than the flour tortillas so check that out if you are on Weight Watchers. With Personal Points everyone will get different results here but many of you can probably make this one relatively low in points.

How many points are in this taco pie?

We estimate that this recipe should make about 8 servings and each serving is about 6 points. This will depend on your toppings too!

Don’t forget to include things like sour cream, extra cheese, salsa, taco seasoning, etc. that you add on top of your ingredients. Use plain non-fat Greek yogurt in place of the sour cream for a low point topping!

What do I need to make WW taco pie?

For this simple casserole style dinner you will need fat free flour tortillas, ground turkey, taco seasoning, refried beans, salsa, Colby jack cheese, green onions, tomatoes, and toppings of your choice. For those of you on Weight Watchers I would suggest getting fat free refried beans for a low point option.

You can swap out ingredients and add in more toppings if you like. You can use things like black olives, extra cheese, hot sauce, jalapeños, and more. Anything you might add to your tacos would go great with this turkey taco pie!

How to make an easy taco casserole:

This recipe is really easy to make. You’ll love how simple it is and everyone will devour it which makes the effort all worth it!

Preheat oven to 350 degrees and cook meat with taco seasoning per package directions

In a skillet ( I used cast iron ) layer tortilla, beans, salsa, meat, cheese

Repeat process leaving last tortilla on top plain

Cover with foil and bake 20 minutes

Uncover, add cheese on top of plain top tortilla and bake for an additional 10-15 minutes until cheese is melted and tortilla edges are light brown

Ingredients

  • 5 - 8” fat free flour tortillas
  • 1 lb lean ground beef or turkey, cooked w/ reduced sodium taco seasoning
  • 1 can fat free refried beans
  • 1 jar salsa - your favorite
  • 2 cups low fat colby jack cheese
  • Green onions, chopped, for garnish
  • Tomato, chopped, for garnish

Instructions

  1. Preheat oven to 350 degrees and cook meat with taco seasoning per package directions
