While my kids were growing up casseroles were a staple on our meal plan. Casseroles are so versatile and you can usually throw something together with the ingredients in your pantry and freezer to end up with a decent meal.

Weight Watchers Teriyaki Chicken Casserole Recipe Ingredients:

  • ¾ cup soy sauce
  • ½ cup water
  • 1/3 cup packed brown sugar
  • 1 tablespoon honey
  • 1/2 teaspoon ground ginger
  • 1 teaspoon olive oil
  • 2 cloves minced garlic
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 1 ½ lbs boneless skinless chicken breasts in bite size pieces.
  • 32 oz frozen mixed stir-fry vegetables with no sauces
  • 1 cup  pineapple tidbits packed in 100% juice
  • 3 cups cooked brown rice
  • Sesame seeds for garnish if desired

Weight Watchers Chicken Teriyaki Chicken Casserole Recipe Directions:

  1. Pre-heat the oven to 350.
  2. Combine the soy sauce, the ½ cup water, the brown sugar, honey, ginger, olive oil and garlic in a small saucepan and cover. Bring to a boil over medium heat. Remove lid and continue stirring constantly for one minute.
  3. Make a slurry by stirring together the cornstarch and 2 tablespoons of water in a small dish until smooth. Add the slurry to the boiling sauce and stir to combine. Continue stirring for an additional minute until the sauce starts to thicken. Remove from heat.
  4. Spread the cut chicken breasts  across the bottom of a 9×13 casserole dish.
  5. Pour one cup of the sauce over the chicken.
  6. Place the casserole dish of chicken in the oven and cook for approx 25 minutes or until the internal temperature of chicken reaches 165 degrees.  Remove the dish from the oven and shred the chicken into bite size pieces.
  7. Heat your vegetables in a pan or microwave until hot.
  8. Add the vegetables, pineapple, and rice to the shredded chicken in the casserole dish.
  9. Cover with remaining sauces and stir well.
  10. Heat casserole in the oven for another 15 minutes until heated through.
  11. Garnish with sesame seeds before serving.
  12. If you’d like to serve this dish cold, skip the last 15 minutes in the oven and refrigerated until ready to serve.
