Ingredients for this recipe
Red potatoes: Cut into 1-inch cubes.
Onion: Medium, chopped.
Salt and pepper: To season.
Butter: For the potatoes.
Cheese: Shredded. We used a Colby, Monterey, cheddar blend.
Bacon: Cooked and crumbled.
Substitutions
You can sub in dairy free cheese/butter options if that applies to you as well. It’s pretty easy to adapt this recipe to your needs.
How to make Campfire Cheesy Potatoes
Step 1: Create your foil packets with a double thickness of heavy-duty aluminum foil (about 18 in. square).
Step 2: Spray foil with non stick spray or grease with olive oil.
Step 3: Divide potatoes and put in the middle of each foil packet.
Step 7: Fold foil around potato mixture and seal tightly.
Step 8: Grill, covered, over medium heat for 12-15 minutes on each side or until potatoes are tender. Carefully open foil so you don’t steam yourself.
Step 4: Dot with butter.
Step 5: Sprinkle with onion.
Step 6: Add Salt and pepper.
Step 9: Sprinkle the bacon and cheeses over potato mixture.
Step 10: Grill 3-5 minutes longer or until cheese is melted.
Step 11: Open foil with caution so that steam can escape.
Storage suggestions
If you have any leftovers, you can keep them in an airtight container in the fridge for up to three days.

Unfortunately this is not a new recipe. I had it published 20 years ago, winning runner up, in Taste of Home magazine. Since then I see slight variations of the original recipe, which yours is very close to mine. No matter what the variation is, it is totally yummy! A great dish over a campfire or on your grill.

Can these be done in the oven??If so what temp and how long would you suggest???
I am sure you could do these in the oven just like roasted potatoes. Toss the potatoes & onions with olive oil, spices,then bake at 350 for 40 mins, add bacon and cheese and bake for another 15 mins. YUM! –

Can you make in the oven
I bet they would work just great in the oven. Cooking time may need to be adjusted. I’d try it at 400 degrees and check after 20 minutes to see how close they are to being done. Then add an additional 10 minutes as needed. Good luck and thanks for stopping by.
