The first step is to prepare all your ingredients. In separate bowls, make the pico de gallo, prepare the guacamole (Feel free to use store-bought if you prefer) and drain and rinse your black beans.

Have your skillet on medium-high heat and add in the olive oil, peppers, and onions. Sauté until the peppers are soft and the onions are caramelized and then set aside.

While you are cooking the peppers and onions, start cooking the rice according to the package directions.

Add the taco seasoning to a bowl with the chicken and a little olive oil. Toss the chicken in the seasoning until it is covered before adding it to the skillet.

  • Juice of ½ lime
