Light & Easy No-Bake Lemon Cheesecake

Making cheesecake doesn’t have to be difficult and it also doesn’t have to be a major indulgence that you can only enjoy on super special occasions. I’ll show you how to make a no bake lemon cheesecake that doubles as a Weight Watchers cheesecake.

Now that Weight Watchers is running the Freestyle program we have a lot of choices! We can eat anything we like but we have to track it, right? Well in this case you’ll be happy to track your lemon cheesecake because it won’t empty your points for the day or week. 

In fact, these lemon cheesecake bites are just 1 point per cup. How awesome is that?! A one point dessert for Weight Watchers that even picky eaters will enjoy.

Here’s what you need to make easy lemon cheesecake: 

There are only a few ingredients in these delicious lemon cheesecake bites. You can have them whipped up in no time and everyone will think you spent hours coming up with such a light, fresh, and delicious dessert recipe. The burst of lemon flavor is delicious and it goes so well with the cottage cheesed and kefir flavors! 

  • Mini Phyllo Shells
  • Lemon Zest (extra for garnish)
  • Lemon Juice
  • Vanilla
  • Sugar 
  • Plain no-fat Greek yogurt 
  • Low fat cream cheese
  • Raspberries for garnish, optional

How to make no WW cheesecake bites: 

This is a no bake cheesecake recipe, you read that right. In fact, you can have these lemon cheesecake bites ready in about 15 minutes.

A quick, sweet, fresh tasting recipe that everyone will love. You can skip the baking of the phyllo shells, it’s not necessary but does make them crispy.

Preheat the oven to 350°F.

Place phyllo shells on a baking sheet and bake until lightly toasted, about 5 minutes; let cool.

Meanwhile, in a medium bowl, briskly whisk together softened cream cheese, yogurt, sugar, lemon juice, lemon zest, and vanilla until smooth.

Spoon cream cheese mixture into a plastic ziptop food storage bag, snip off a corner and evenly pipe mixture into baked shells (or fill with a spoon); top each with a piece of strawberry and garnish with lemon zest. Serve immediately or cover and refrigerate up to 4 hours. Yields 1 tart per serving.
