What do I need to make this Moroccan sheet pan chicken?
Here is a quick list of the ingredients needed to make this Moroccan style Weight Watchers chicken sheet pan dinner. You can get most of these ingredients quickly and easily through grocery pickup. It’s my new favorite way to get groceries. No impulse buys, no hassle. They load them right into my car. I highly recommend it if you have this option at a store near you.
- Non-stick oil spray
- Boneless, skinless chicken breasts
- Salt
- Ground black pepper
- Baby potatoes
- Baby carrots
- Chickpeas, drained, rinsed and patted dry
- Ground cumin
- Sweet or spicy paprika
- Turmeric powder
- Lemon
- Black olives
How to make my delicious Weight Watchers sheet pan dinner:
- Preheat the oven to 375°F and spray a large rimmed baking sheet with a little bit of nonstick spray and set aside.
- Lay the chicken breasts on one end of the baking sheet and sprinkle a little bit of salt and black pepper over them.
- On the other end of the baking sheet, arrange the potatoes, carrots and the chickpeas.
- In a small bowl combine any remaining salt and black pepper with the ground cumin, paprika and turmeric powder until well combined.
- Sprinkle half of the spice mix over the chicken and vegetables then spray them with cooking spray, then sprinkle the remaining spice mixture over the ingredients.
- Arrange a slice of lemon over each of the chicken breasts then the remaining over the vegetables.
- Roast in the center of oven for 30 minutes or until the chicken is cooked through.
- Remove the cooked chicken from the sheet pan and place on a serving dish covered with aluminum foil to keep warm.
- Continue to roast the vegetable until the potatoes are tender, it should take another 15 to 20 minutes.
- Remove from oven and arrange vegetables on the serving dish with the cooked chicken.
- Before serving sprinkle some chopped parsley and olives over the ingredients.
Weight Watchers Sheet Pan Chicken Dinner Tips:
If you are making this recipe with potatoes that are slightly larger, quarter them so that they cook more evenly and at the same time as the chicken.
You can use larger carrots just make sure they’re in manageable chunks to avoid them not cooking evenly or quickly enough.
If your chicken breasts are extra thick, you can cut them into halves so that they’re thinner and will cook more quickly.

- 24 oz or 1.5 lbs of boneless, skinless chicken breasts
- 1 1⁄2 teaspoon salt
- 1⁄2 teaspoon ground black pepper
- 3⁄4 lbs baby potatoes
