Today I’m sharing my chicken fried rice recipe! This is a great Weight Watchers recipe and a healthy chicken fried rice with just 2 WW points per serving! Chicken Fried Rice Recipe | WW Fried Rice

This chicken fried rice recipe is great if you are craving some Chinese takeout. I know sometimes the craving strikes and I want nothing more than to just pickup some takeout but it’s loaded with points and calories so it’s just not practical for a healthy lifestyle.

For this recipe, I get to feel good about serving up something my family loves while also sticking to my Weight Watchers plan! You can do the same! It makes a great meal prep too, if you are looking for a healthy recipe that will last in the fridge all week long for lunches or quick dinner recipes, this is the one to try!

Ingredients in chicken fried rice: 

Here is a list of the ingredients in chicken fried rice. You can use this list to do your shopping or print it out below. They’re the same in both places for your convenience! 

  • Cooking Spray
  • Carrots
  • Large Egg Whites
  • Cooked Long Grain Brown Rice
  • Uncooked Scallions, Chopped
  • Frozen Peas, Thawed
  • Garlic Cloves, Minced
  • Low Sodium Soy Sauce
  • Boneless Skinless Chicken Breasts

How to make chicken fried rice: 

  1. First thing you’ll need to do to make this chicken fried rice recipe is heat a non-stick skillet or wok over medium high heat. Add the cooking spray before you add the egg whites and cook them until scrambled. This should take about 4 minutes or so. Remove the eggs from the pan and set them aside for later. 
  2. Remove the pan from the heat and re-coat it with cooking spray. Put it back on the stove and add the scallions and garlic. Sauté them for about 2 minutes. 
  3. Add the chicken and carrots and do the same thing. Add the chicken and saute until it is golden brown and cooked through. You’ll need about 5r minutes for this depending on the size of your chicken chunks. 
  4. Now we can stir in the egg whites we cooked earlier and add the cooked brown rice, peas, and soy sauce to the mixture. Cook for a few minutes until everything is heated through. 

Each serving is 1 cup and the recipe makes 6 servings. That means you will probably have some leftovers on hand to use for lunches throughout the week as well.

This may make the recipe a bit more wet though so be sure to plan accordingly to cook a bit longer or cook the cauliflower separately!

  1. This sounds perfect for my weekly lunches. I do not eat chicken so will just use whole eggs for some added protein. Thinking maybe sprinkling with a little crushed peanut might be good too. Will prep a batch this weekend! Thanks so much for the recipe

  2. I’m a little confused. Recipe says this is 6 servings…how does 2 cups of rice make six, 1 cup servings? Am I doing something wrong? Thanks

    1. We consider all the ingredients when calculating the servings and not just the rice. Everything gets mixed together and then the servings are portioned out at the end. The chicken alone adds between 2-2 1/2 cups of ingredients along with everything else in the recipe. Feel free to adjust the serving sizes and portions to your liking and calculate the points accordingly (or not at all if you don’t need the WW info).
