This recipe serves 4 but you could easily make this recipe as a meal prep option and heat it up throughout the week for lunches and dinners.

Meal prepping is a great way to make sure that you stay on track with your Weight Watchers program throughout the week. If I know that I have something healthy and delicious waiting and ready to go I’m less likely to reach for something fast and full of unhealthy points.

You could even double the recipe so you have some for dinner tonight and leftovers for throughout the week. This sauce is amazing and packed with flavor so just think of how tasty it will be after it marinates in those juices for a day or two in the refrigerator!

Is it hard to make this Weight Watchers Italian Chicken?

Nope, not at all! Here’s the recipe:

  1. Start with a non-stick skillet and spray with cooking spray. Over medium high heat add in the chicken, sprinkled with salt and pepper, and cook until golden brown and almost cooked through. Should take about 6 minutes. Set aside.
  2. Next, add some more cooking spray and put in your peppers and potatoes. You’ll need to saute them until lightly browned, another 4-6 minutes.
  3. Add the wine and simmer for 2 minutes.
  4. Next you’ll want to add in the marinara sauce and water. Turn the heat up to high and bring everything to a boil.
  5. Reduce heat to low, cover, and simmer for 15 minutes.
  6. Next, stir in the chicken and any juices.
  7. Cover and cook for 7 minutes until potatoes are completely tender and chicken is cooked through.

Each serving is about 1 1/2 cups.
