There’s nothing overly fancy happening here. We are going to be using some simple ingredients to make a fresh and delicious Weight Watchers banana pancakes recipe.
One of my favorite things is recipes that use wholesome, regular ingredients but finds a way to elevate them to something new and exciting. You probably already have a lot of these ingredients on hand. Don’t be afraid to whip them up into something new!
These are flourless pancakes…but they’re still light and fluffy. So don’t panic when you see there’s no flour in the list 🙂
We’ll be using bananas, eggs, vanilla extract, baking powder, cinnamon, nutmeg, powdered sugar, fresh blueberries, and cooking spray! It’s just a few simple ingredients that come together to make an amazingly easy breakfast recipe.

How to make this easy Weight Watchers banana pancakes recipe:
Let’s dive right in and learn how to make these delicious banana pancakes. They’re truly fluffy and delicious and they only have a few simple ingredients, it doesn’t get better than that!
The first thing we need to do is mash up 1 and 1/2 bananas in a bowl. Slice the rest of them for toppings later. Next, whisk the eggs, vanilla, baking powder, cinnamon, and nutmeg in the bowl with the bananas. Mix until they’re well blended and fairly smooth.
Now we’re ready to cook these tasty flapjacks. Spray a large nonstick pan with cooking spray and turn the stove onto medium heat.
Each pancake will be about 2 tablespoons of batter. Depending on the size of your skillet you might need to do these one or two at a time.
Cook each pancake over medium heat until the edges are no longer runny and the bottom is browned.
Flipping these pancakes can be tricky. Use a thin spatula for best results and try to only flip them once. Each side will need to cook for about 1 minute or so depending on your stove and pan!
After you remove the pancakes from the pan you can top them with berries, sliced banana and a dusting of powdered sugar. Each serving is 8 pancakes, 1/3 c fruit and 1 teaspoon of sugar.
